Chef Leo Spizzirri’s Sole nel Piatto (“Sun on the Plate”) Pizza Demonstration

Sole nel Piatto is a sunny, specialty pizza well known in Italy. Chef Leo Spizzirri from the North American Pizza and Culinary Academy put his own spin on it at the 2019 International Pizza Expo to produce a beautiful and fun treat for your restaurant or kitchen table!

Steps for Making Chef Leo’s Sole nel Piatto Pizza

  1. Take a dough ball of pizza dough and press and stretch it out into a flat circle.
  2. Using a pizza cutter, make 8 1″-2″ cuts around the edges
  3. Place 8 Cherry Tomatoes around the edge of the dough in between the cuts. (Mutti™ is a wonderful supplier of these tomatoes)
  4. Add a bit of Grande’s™ whole milk shredded mozzarella cheese, along with oregano or other seasonings on top of each tomato.
  5. Bring up the two sides of dough over each tomato and seal them to make points.
  6. Stretch the pizza slightly, and top the center with the sauce and toppings of your choice. (Margherita is a nice choice.)
  7. Bake in the center of the oven a little ways away from the flame (not the hottest part of the oven – apx 650°F) for a slightly extended period of time.
  8. To serve, cut across the pizza between the points to make little triangular pizza “cups” that hold the hot cherry tomato for a delightful bite of bliss!

This dish is an easy and fun twist on a traditional pizza that is sure to impress your guests.
