Thanks to you and Crafty for making it available for free.
I have most all of your books and have read them countless times, but it was really great to see you do the things you talk about firsthand.
It was also interesting to see that you had adapted the stretch and fold and cold fermentation into the recipes.
I made a batch of the American-Style Neapolitan dough this weekend using the class materials and techniques.
I divided it into four dough balls, used two the next day and froze two. They turned out great!
I’ll be working my way through the others in the near future and am really looking forward to it.

Peter, I adore you! I have your bread baking class and your pizza class and I am getting to be a pretty good baker…LOL…something I never thought I would be able to say.. Thank you sooo much and hope you have more classes soon…count me in.
