Written By John Arena
Tuesday, 20 June 2017 Guest Columns

“We few, we happy few, we band of brothers”- Henry V Over a year ago I was asked to join a group of elite pizza makers in an effort to break the Guinness World Record for the longest pizza in the world. The existing mark was set at 6,082 ft. My first thought was “How hard could it be?” After all, I’ve been making pizza for nearly 50 years and…Read More…

Brad’s Corner: Fresh Pesto and Shrimp Pizza

Written By Brad English
Tuesday, 13 June 2017 Brad's Corner

I felt like pesto.  Good pesto.  Fresh pesto! So, I looked around for some recipes that felt right and set about coming up with a few pizza ideas using some fresh pesto. It’s really quite simple and like anything, you can add and subtract and come up with your own version quite easily, which is really what cooking and enjoying food is all about — at least for me. I want…Read More…

Written By Peter Reinhart
Monday, 05 June 2017 Interviews

Note from Peter: I finally met Leo Spizzirri for the first time at the recent International Pizza Expo, after years of hearing about this pizza genius who always, I was told, works “behind the scenes.” At the Expo, Leo presented a number of demo’s for Forno Bravo, showing how to create more than just pizza in a wood-fired oven. Each demo started with about 5 people in the audience (after…Read More…

Hi Everyone, I’m still riding the high of last week’s International Symposium on Bread, but it’s time to get back to pizza, which I will do in next week’s posting, featuring a wonderful interview with world pizza champion Leo Spizzirri.  Look for it to post on Tuesday, June 6th. But, for now, a few final words about the bread symposium, whose theme was “The future of bread.” In my last…Read More…

Hi All, So, I’m still coming up for air from the International Symposium on Bread (which we called “On The Rise” for short), but wanted to share this first article, that just came out today, by writer Michael Solender. He did a great job of capturing the spirit and some of the highlights, for which I’m very grateful. I will add a new post over the weekend to give you…Read More…

Peter’s Blog: Bread Symposium update

Hi Everyone, By this time next week we will be wrapping up the first Johnson & Wales University International Symposium on Bread. By the end of this week I should have the log-on for…Read More…

Interview with John Arena

Written By Peter Reinhart
Tuesday, 09 May 2017 Interviews

Note from Peter: We’ve been loving the contributions of John Arena here on Pizza Quest for the past four years. He not only is a mentor to many, and an educator, but his columns on what pizzeria operators need to know can serve as a master template for everyone in the business. Since most of you already all of this, I’ll let the following interview fill in the gaps and…Read More…

New Webisode: Pinot Noir Master Class, Part One

We’re back with Dan Karlsen, master wine maker at Talbott Vineyards. In the previous webisode Dan introduced us to Talbott’s wines, estate grown and pressed in the Monterey coastal region of Salinas. But, in this segment he takes us deeper into understanding one of California’s (and Oregon’s) trickiest wines, Pinot Noir. He uses every analogical trick in the book to help us comprehend the subtleties, whether basil on a pizza,…Read More…
