Mozzarella di Bufala Production: The Asian Buffalo
The milk tastes better if you pet the Asian Buffalo.
Buffalo Mozzarella is creamier, softer, and far more flavorful than cow’s milk mozzarella; it has a tanginess and depth of flavor that’s all its own. This can be attributed to water buffalo milk’s high-fat content — nearly double that of cow’s milk. Fresh Mozzarella di Bufala is almost unrealistically soft — described by the author, Sam Anderson, as “the golden mean between yogurt and custard and cottage cheese and heavy cream and ricotta.”
However, it is also very difficult to get fresh outside of the Italian regions of Campania, Lazio, Apulia, and Molise.
