Wood-Fired Lumpia
Equipment
- 1 Dutch Oven
Ingredients
Meat
- 3 lbs ground pork
- 1 lb finely chopped shrimp
Veggies
- 5 cloves garlic
- 1 large carrot
- 1 lb cabbage This is about half of a medium size cabbage
- 1/5 onion
- 1/2 cup soy sauce
- 1/4 cup fish sauce
- 3 eggs 2 for meat binder; 1 for wrapper glue
- 1 pack lumpia wrapper You can get this in asian stores
- 48 oz Cooking oil
Sauce
- 1/4 cup Sweet Chilli Sauce We recommend the Mae Ploy Brand.
Instructions
Prep
- Mince all the vegetables in a food processor. Otherwise, mince/grate them manually.
- Mix all the ingredients in large bowl. Save one egg.
- In a small bowl, crack that egg, then beat it with a whisk or a fork . This will serve as a glue for the rolls.
Rolling
- Peel one lumpia wrapper (Note: It is better to peel one wrapper at a time. Otherwise, the peeled wraps will harden due to exposure to air.
- Place about 2 tbs of the meat and veggie mix along the edge of the wrapper.
- Roll the lumpia.
- With a brush or a finger, apply some of the egg on the edge of the rolled lumpia.
- Gently roll the rest of the lumpia onto the edge.
- Cut the roll in half.
Frying
- Fry the lumpia until golden brown.
- Serve with sweet chilli sauce. We recommend the Mae Ploy brand.
