A Golden Oldie: Tony Gemignani Teaches Me How to Toss Dough

Hi Everyone,

We’ve been busy recording new interviews for the upcoming season, which will launch soon. Meanwhile, I wanted to bring back some of the fun webisodes from the past, especially for those of you who are new to Pizza Quest.

Our friend Tony Gemignani is all over the news these days, having just thrown the world’s biggest pizza party (simultaneously, on a number of Princess cruise ships), opening his franchise Slice Houses all over the country, and simply always staying one step ahead of everyone else. When we first launch our webisode series, way back in 2011, we visited Tony shortly after he opened Tony’s Pizza Napoletana in San Francisco, which has since become listed as one of the 50 greatest pizzerias in the world. We have a number of episodes with Tony, so if you’d like revise those, just type his name in the search window at the top of the home page and pick and choose. In the one featured here, he gives me a crash course in how to toss pizza dough like the champions do it. At the time, Tony was pretty much unbeatable in this acrobatic category but has since retired from those competitions to focus on his pizza craft, including winning the world Margherita pizza category, which he demonstrates in this webisode.

But for the dough tossing lesson, watch this, and then get yourself a rubber dough pro and practice, practice, practice.

I just saw an old YouTube video of Tony teaching this skill to Jay Leno on the Tonight Show and Jay had even less success than me. You can see that one and more of Tony here.

I’ll be back soon with all new interviews and Pizza Quest podcasts but, in the meantime, I invite you to navigate through the webisode category of our site and watch more of the these golden oldies. You’ll see Nancy Silverton, our visit to the Taco Temple, an wonderful series on the pizza/beer challenge that began in Boulder at Basta with James Beard winner Kelly Whitaker and culminated at the Great American Beer Fest in Denver, and many others.  If you want to watch them in order, start on the last page of the webisode list and work your way backwards. I can promise you hours of great entertainment and joy.

Keep checking back here as we’ll be posting all new podcasts beginning soon. Till then, ciao for now and may your pizzas all be perfect!
