Wood-Fired Korean BBQ Short Ribs

Equipment

  • 1 Tuscan Grill

Ingredients
  

  • 3/4 cup Soy sauce
  • 1/2 cup Water
  • 1/2 cup vinegar
  • 1/2 cup Chopped onion
  • 1/4 cup Minced garlic
  • 1/4 cup Minced ginger
  • 2 tbp Sesame oil
  • 3 tbp Brown sugar
  • 3 lbs Short ribs
  • 2 pinches Green Onions for garnish

Instructions
 

  • Start a fire in your Forno Bravo oven.
  • Wait for the wood to turn to coals.
  • While waiting, mix the marinade in a bowl.
  • Add the meat into the marinade.
  • Let it sit for 30 minutes. Optionally, you can marinate the meat for 12 hours.
  • Slide your tuscan grill over a bed of coals in the oven and wait for it to get hot.
  • With a high-temp glove or a metal hook, pull the tuscan grill to the oven's landing.
  • Put the short ribs on the grill and push the grill back into the oven.
  • Grill each side of the meat for 3-5 minutes.
  • Serve with rice and sprinkle with green onions.
