Stone Bread Primary Fermentation

Start your primary fermentation on the morning of the day when you want your bread. The general idea is to take your pre-ferment and add the ingredients you need to complete your recipe. For example, if the Ciabatta recipe calls for:

  • 3 cups of flour
  • 1 1/4 cups of water
  • 1 TBS of olive oil
  • 2 tsp salt
  • 2 tsp yeast
  • Add the following to our pre-fermented dough to finish the recipe:

  • 1 cup of flour
  • 1/8 cup of water
  • oil
  • salt
  • 1 1/2 tsp yeast
  • Again, hit the dough button your bread machine, and leave. It will run for another 90 minutes, and make a nice, light, sticky dough. When your bread cycle you will be done with your primary fermentation.

    At this point, you have invested four minutes in your world-class Pizza Stone Ciabatta.

    Time to move on to Degassing your dough and its Secondary Fermentation.
