Pizza Talk Season Two, Episode 2: The Bar/Tavern/Parlor Pizza Renaissance
We’re back with another exciting episode, one that we’ve been holding onto for a number of months while gearing up for Season Two, featuring our beloved “Pizza “Yodi’s” (Brian Spangler and John Arena), joined by a major “Yoda” in his own right, Adam Kuban. Adam is not only an important long time voice and influencer in the pizza world (think Slice, and also Serious Eats, where he was THE voice) but is now the John the Baptist (so to speak), that is, the harbinger, of the bar pizza renaissance.
This is long episode (actually 5 segments, combined into one full length feature), so I don’t expect anyone to watch it straight through. Think of it like a mini-series in which each of our Yodi’s will discourse on and demonstrate his own version of this style, as well as tell some great stories about its origins and variations. I will say no more because, frankly, they will say it all, So, take this one in tasty bites over the next few days and enjoy, as you take a deep dive into the ever expanding world of thin-crusted bar/tavern/parlor pizzas. Then go out and find a local version (or two, or three) and see how they compare to these benchmark versions.
