International Symposium on Bread Update
Hi Everyone,
Just a short post this week to let everyone know that On The Rise: The 2017 Johnson & Wales International Symposium on Bread, presented by Puratos, has completely sold out and we now have a waiting list of 25 people! I just want to thank all of you for helping to spread the word and, if any of you reading this are coming the Symposium on May 22nd and 23rd, please let me know that you are Pizza Quest followers when we meet up.
As we get closer to the date of the Symposium I will post a schedule of the talks by all the speakers and a link that will allow you to watch the presentations while they are happening via Live Stream so, even if you can’t be there with us you will be able to see and hear them, and they will eventually be archived on our Symposium Events Page and on YouTube.
Your support has been overwhelming and it gives me great hope that we will be able to do more symposiums over the coming years. But first, as they say in gymnastics, we have to stick the landing on this one. I’ll give you a full report after the event but, in the meantime, join us again next week when we’ll post a lively interview with the wonderful and talented Brigit Binn, whose recently published book on cooking with fire is now available. I’ll fill you in with all the details next week. Till then, may your crust be crisp, your bread always rise, and your pizzas all be perfect!!

The cover box for the “Bakers Without Borders” game, which will be featured at the Symposium

That’s me, with a loaf of freshly baked Struan, my favorite bread of all time.
