The mill still uses traditional glazed terracotta storage jars, made in nearby Impruneta fro the olive oil storage. The oil is stored in these huge old jars, and bottled, or decanted, throughout the year. Everything they make is eaten within a year, and the jars are ready to go again. They now have a number of large stainless steel storage containers was well, but these are pretty cool.
