Forno Bravo ovens are built with a dense refractory core that retains heat for hours, unlocking flavors conventional ovens simply can’t match. While their weight requires some planning for installation, our team is happy to guide you through the process to ensure a smooth setup—just ask our customers; they’re certainly worth the weight :). Depending on your oven’s size and your backyard’s layout (including fences, gates, and access points), different equipment may be needed to move it safely.

5. Dome Size: Heat-Up Time & Heat Retention

Forno Bravo ovens function like a battery—heat is the energy. A larger dome stores more heat and releases it slowly, but takes longer to “charge” (heat up). A smaller dome heats up quickly but loses heat faster. Your choice of oven size affects both heat-up time and heat retention, depending on how you plan to use it.

Heat-Up Time

The time it takes to preheat your oven depends on its size and dome thickness:

  • 70 Size Ovens: Heat up in 30 minutes to 1 hour, making them perfect for quick pizza nights or casual weekday cooking.
  • 80, 90, 100, and 110 Size Ovens: Require 1.5 to 2+ hours to fully heat, but provide a more consistent, longer-lasting heat ideal for extended cooking sessions.

Smaller ovens reach high temperatures faster because their thinner walls require less fuel to absorb heat. In contrast, larger ovens take longer but hold onto that heat much longer once fully heated.

Heat Retention

Once at temperature, the oven’s ability to maintain heat depends on dome size and thickness:

  • 70 Size Ovens: Retain heat for a shorter duration, best suited for smaller, intimate gatherings but still great versatility for unique dishes.
  • Larger Ovens (80–110): Hold heat for hours, making them ideal for both pizza and multi-course meals, baking bread, roasting meats, and slow cooking.

A smaller oven is great for quick, high-heat cooking, while a larger oven excels at heat endurance. Whether you’re making a few pizzas or planning an all-day cooking event, choosing the right dome size ensures the best cooking experience for your needs.
