Pizza Talk: Sourdough Pizza with Dan Richer and Razza
Razza Pizza Artigianale has become known as one of the finest, most inventive and in demand pizzerias in the world. It’s founder, Dan Richer, is on a never-ending journey of self-discovery — in both pizza and in life — which makes him the ideal candidate for a Pizza Talk interview. Dan is among a growing cohort of influencers (think Anthony Mangieri, Will Lawrence-Grant, Derek Sanchez, among them) in the movement toward naturally leavened, sourdough pizza. But Razza is also a leader in thoughtful local sourcing of grain and ingredients — two other fast growing trends — which makes Dan a sought after role model and guide by other pizza operators.
