New Webisode: John Arena at The Forno Bravo Expo
This webisode is part of our ongoing series from the 2015 Forno Bravo Oven Expo, at Talbott Vineyards in Salinas, California. For three glorious, sunny days we had the opportunity to meet and cook with passionate, fellow “fire-freaks,” and work side-by-side with talented chefs, oven owners, growers, cheese and wine makers, and famous pizzaiolos like John Arena. John, as many of you already know, is a regular Guest Columnist here on Pizza Quest, and also teaches an accredited course on the history and the business of pizza at the University of Nevada. As you will learn in this segment, he has over 48 years of experience, still makes pizzas alongside his father (who is now over 90 years old) at their restaurant, Metro Pizza in Las Vegas, and has dedicated much of his recent time to passing down the knowledge and wisdom that he spent years accruing. When John asks the question, “What is the story this pizza has to tell me?’ and he talks about the relationship between the pizza maker and the restaurant guests, he is offering us all nuggets of pure gold. Join me (maybe even pour yourself a glass of wine as we did in this episode), and take in every delightful moment. This conversation represents to me what I have called in my books, “The transmission of knowledge from one generation to the next.” John is not only our guest columnist here, he is our resident philosopher, our Yoda.
