Pizza Talk: Nicky Giusto, Our First Flour Miller Yoda
Central Milling has, in a short time for a modest size operation, become a major player in the land of milling giants. Under the leadership of founder Keith Giusto and his nephew, Nicky Giusto, Central Milling is now an important go-to company because it continually anticipates and meets the needs of the artisan and craft baking community. Nicky is also an international baking champion, representing the United States as captain of the 2016 Coupe du Monde (World Cup) bread team, and as head coach and manager of the 2020 team. Nicky is the first miller/baker to join our esteemed Pizza Talk Yodi Club, and in future episodes we plan to have him back, along with other flour experts as we cultivate a whole new panel of “Flour Yodi’s.” But why wait, as in this very informative and entertaining episode Nicky addresses many of the questions and issues that bakers and pizza makers have regarding all things related to flour and, also, sprouted grain.
