Easy Fall Recipe from the the Jamestown Bread Project

We are excited to begin sharing more recipes from bakers Andrea and Dori Colognese and the Jamestown Bread Project with our wood fired community. Andrea and Dori are professional bakers who specialize in wood fired baking in Rhode Island. They owned and ran a bakery in their hometown for many years that exclusively used a wood fired oven, and now they use a Forno Bravo Modena commercial oven at their home for bread and pizza baking, community classes, and special orders. We are thrilled to explore their well-tested recipe offerings in the coming months!

Rustic Apple Tart by Dori Colognese

Apple tarts are the ultimate fall pastry. Crisp-tender apples, with tart, sweet, and flaky elements all in one place. Following is Dori’s recipe for this classic, rustic delight that bakes beautifully in a wood fired oven. This is a three-part recipe with a simple pie dough, the filling, and a crumb topping that all come together in one tasty treat!


Dutch Oven Spatchcock Chicken by Chef Anthony

September is National Chicken Month. In its honor, we are featuring a recipe for Dutch Oven Spatchcock Chicken. Spatchcock chicken is a fancy way of referring to a chicken that has been split in half and laid open for roasting. Chef Anthony demonstrates this technique for us, pairing his chicken with squash, zucchini, potatoes, thyme, and other fall flavors for an easy one-pot, no-muss, no-fuss meal for your dinner enjoyment.


Date-Stuffed Peppadew® Peppers by Chef John O’Neil

This recipe is for a unique appetizer that is a favorite creation of Chef O’Neil. It is a little spicy, a little sweet, and a little savory. It hits all of the senses! Dates, herbs, and farmers cheese are stuffed in a pepper, then wrapped in ham and drizzled with honey. It is an odd combination on the surface, but WOW!
