We hope your summer has already been full of good times with family and neighbors enjoying outdoor living, hopefully with a wood fired oven! In July, we were very excited to launch the new design of the Forno Bravo website, and now the Wood Fired Newsletter. We've received numerous compliments on the colors and ease of navigation throughout the site.

This month's newsletter starts off with Chef Bart providing an instructional on doming along with a recipe to help you try out this technique.

Right on the heels of the last contest, we're pleased to announce another Forno Bravo contest that we hope gains many submissions. Also, we have more information about the upcoming Forno Bravo Expo!

Community Cookbook: Pancetta and Doming

Two weeks ago, I posted information on wood and the flavor characteristics that the different woods can impart in the overall flavor of the pizza. This week, as a follow-up, I wanted to talk a little about "doming" the pizza during the cooking process.

To "dome" the pizza (or "doming") is the practice of lifting the pizza off the hearth and holding it close to the dome for a short period of time. The act of holding it closer to the flame or dome is going to rapidly toast the toppings, char the dough, or finish the melt on the cheese. This technique is typically done at the end of the cooking process, but it is not always necessary. Based on your individual toppings and the state of your dough, this is a great method to use to take your creation from good to great.

It is said another benefit of "doming" is to impart more smoke flavor, though I am not quite sure the "extra" smoke gained in this short cooking/finishing time can be dramatically tasted. Nonetheless, the ritual, art, and tradition of "doming" is a part of the Napoletana pizza lore that most likely inspires us all to make an extraordinary pizza.

I found "doming" to be a perfect approach to finishing pancetta on my pizza this past week. The extra time close to the flame and heat of the dome creates a crispy crunch on the exterior of the salty pancetta that leaves you craving more after each bite. READ MORE

contestWe're turning the contest table around this time! Instead of a photo contest, we'd like you to put on your chef's toque and come up with a non-pizza wood fired oven recipe. Let your imagination run wild to create that unique dish cooked distinctively in a wood fired oven. This will be a quick contest - entries will only be accepted until August 31 because we will feature the winning recipe during the Forno Bravo Expo, September 19-20. Our own Chef Bart will determine the winning recipe, and the winner will rec9eive a $75 gift certificate to the Forno Bravo store.

Enter your recipe in the Community Cookbook at fornobravo.com. At the top of the page, you'll see a button to "Submit a Recipe."  Start the title of your recipe with the word, "CONTEST" so we know your recipe should be considered. Don't forget to include a picture of your culinary masterpiece!

Forno Bravo Expo - Celebrity Chefs and Wood Fired Cooking!

Update, Chef Todd Fisher, Head Chef and host of Discovery Network's "United States of Bacon" has agreed to join us.

The 2015 Forno Bravo Expo will be held September 19-20 on the grounds of the Talbott Vineyards in the beautiful wine country of Monterey, California. In addition to the cooking demonstrations, you'll have hands-on access to our ovens, oven management tips, food and wine sampling and the opportunity to get answers to your questions about cooking and how to use wood fired ovens from professional chefs.

We will also be holding a Dealer Workshop to assist our dealers and contractors with product knowledge, installation information and available online resources.

All of the information for the Expo can be found on the Forno Bravo Expo Facebook page. Under the Events tab, click on subscribe so you'll be notified of any updates. The Forno Bravo Expo is free to attend but you must register at www.fornobravoexpo.eventbrite.com. Attendance is limited, so register today!

We are excited to show you the many features of the updated Forno Bravo website! You'll find a cleaner, modern look and more ways for our viewers to participate in the wood fired community. The Community Cookbook is available to share your favorite recipes, and we encourage you to share images of your oven and recipes by submitting them through the Image Gallery.

We have developed a very robust Dealer Locator tool that allows you to drill down to specific residential or commercial needs and services. Looking for a wood fired dining experience? The new Wood Fired Food Near You Locator allows you to find restaurants, caterers, vineyards, cooking schools and more that are in your proximity. Bella Goes Hollywood

The Bella Medio 28 will be featured n HOME FREE, FOX's new competition series featuring couples vying to win their dream home. The show premiered Wednesday, July 22 (9:00-10:00 PM ET/PT), and is about nine deserving couples are challenged to revive one run-down home every week. During each episode, famed professional contractor Mike Holmes ("Holmes on Homes") will present the couples with tasks designed to test and challenge the skills of these do-it-yourself enthusiasts. Holmes will be with the competitors every step of the way-picking apart their work and demanding they meet his high standards, while also sharing his expertise and guidance to help them reach new heights. But in a surprise twist, when the work is done for the day, the couples don't have far to travel to get home...because not only must they work together to restore the home, they must all live together in the same dilapidated work site 24/7.
