Default Air Gaps between bricks

I am building a small oven from leftover bricks (this will be my practice and experiment oven).
I am using old bricks from a demolition ,some of them are chipped ,some uneven.
1)What is the best way to level the bricks? Should I use brick shims along with mortar?
2)What is the best way to fill air gaps?
Can I use Clay, Refmix or the mortar I've been using?
