Rinse and dry the nuts. With a sharp knife, score a deep X in the husk in the side of the nut to keep them from exploding in the oven.
Toss with olive oil and put in a wood fired oven-safe pan. Roast for 7-8 minutes at a 500 degree F wood fired oven.
Let them cool slightly and then remove the husks. (Note: It is easier to remove the husks when the nuts are still warm.) You can add a pinch of salt, if you wish. Enjoy right away!
