We are a mobile wood fired pizza company available for catering events and private parties. The Pizza Company is lead by Michael Johnson, a chef with nearly two decades of experience. He is a graduate of the Culinary Institute of America in Hyde Park, New York. After moving to California, Michael worked in Napa and Sonoma counties, falling in love with the area and climate that produced such fresh ingredients. We are excited that he is now leaving a culinary mark in the Sacramento area.
Firevine offers our clients a unique culinary experience: We have an authentic Italian wood-fired oven on a custom-built trailer that can be transported directly to your event. The warm, glowing flame and scent of a wood fire elevates the mood of any event... and highlights the flavors of anything we bake in our oven.
We are a "mom and pop" business, located in Petaluma. In 2006, we got our first custom built wood-fired oven. Pizza Van Go is New Mexico’s first mobile Italian wood-fired oven pizzeria. Our authentic Neapolitan pizza is crafted in the tradition of Naples, Italy, the birthplace of pizza. We adhere to the strict guidelines of the Vera Pizza Napoletana Association (VPN) of Naples, Italy. Our pizza is made just the way it’s been done in Naples for over 100 years. We use a specially milled “00” pizza flour imported from Italy and imported San Marzano tomatoes grown in the Mount Vesuvius region of Naples where the soil is rich and volcanic. We source local farmers to supply the highest quality ingredients. And we even make our own fresh Mozzarella Fior di Latte in-house. The pizzas come out of our 900 degree oak-fired oven in 90 seconds - blistered with that incredible roasted smoky flavor. The crust is puffy and crisp on the outside and soft and chewy on the inside. Il Cane Rosso comes to the Dallas-Fort Worth area from Jay Jerrier, part of the ownership team behind Campania Pizza. Jay’s passion for pizza - real Italian pizza - truly began in 1995 on a honeymoon trip to the Italian Riviera - he still has the picture from Pizzeria Aurora in Sorrento.
Flash forward 10 years to 2005 in Dallas.
