A little sliced red onion&#8230;<\/p><\/div>\n<p>When we first began contemplating what Pizza Quest could be as a Travel\/Food Series, one of our early goals was that the show would vicariously transport viewers around the world as we journeyed on our quest to find the secrets to that perfect pizza. I wanted people to feel what I had when I first read Peter&#8217;s book, &#8220;American Pie: My Search for the Perfect Pizza&#8221;.\u00a0 As I read the opening chapters I felt as if I was connected to Peter as he described the places, the people, the smells, the tastes and some of the secrets of the master pizzaiolos he had found.\u00a0 I knew right away that this had to be a show some day. when I watched Anthony Bourdain exploring so many cultures and tasting such amazing food.\u00a0 My favorite parts of those travels was when it seemed I forgot I was watching a show and would just get lost in the moment, as if I was with a good group of people all enjoying the shared passion of good food and good conversation.\u00a0 Nobody can take you to this place like Anthony.\u00a0 You really should &#8220;travel&#8221; I thought about one of my favorite chefs. Using a substitute ingredient will not only make the recipe a little more of your own, but will also open up the opportunities of discovering other taste connections and aha&#8217;s.<\/p>\n<div id=\"attachment_764\" style=\"width: 650px\" class=\"wp-caption alignright\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-764\" class=\"caption alignright size-full wp-image-764\" title=\"Add the perfect balance of sliced grape tomatoes and pulled thin slices of prosciutto...\" src=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2012\/02\/_mg_0149.jpg\" alt=\"\" width=\"640\" height=\"427\" align=\"right\" border=\"0\" srcset=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2012\/02\/_mg_0149.jpg 640w, https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2012\/02\/_mg_0149-300x200.jpg 300w\" sizes=\"(max-width: 640px) 100vw, 640px\" \/><p id=\"caption-attachment-764\" class=\"wp-caption-text\">Add the perfect balance of sliced grape tomatoes and pulled thin slices of prosciutto&#8230;<\/p><\/div>\n<p>Make sure to pre-heat your oven to 550 degrees, or higher if it can go.\u00a0 Later, before baking, I put my oven onto Convection Bake, which automatically lowers it to 525 degrees. This seems to cook my pizzas faster by moving the hot air around the oven.<\/p>\n<p>Spread the pizza dough out on your floured peel.<\/p>\n<p>Drizzle a little of Peter&#8217;s Herb Oil on the dough.\u00a0 I added this, because I nearly always use this on any pizza that doesn&#8217;t have a tomato sauce.<\/p>\n<p>Add the grated Smoked Gouda, or Smoked Mozzarella<\/p>\n<div id=\"attachment_765\" style=\"width: 650px\" class=\"wp-caption alignright\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-765\" class=\"caption alignright size-full wp-image-765\" title=\"Bake this just enough to get it a little charred...\" src=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2012\/02\/_mg_0159.jpg\" alt=\"\" width=\"640\" height=\"427\" align=\"right\" border=\"0\" srcset=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2012\/02\/_mg_0159.jpg 640w, https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2012\/02\/_mg_0159-300x200.jpg 300w\" sizes=\"(max-width: 640px) 100vw, 640px\" \/><p id=\"caption-attachment-765\" class=\"wp-caption-text\">Bake this just enough to get it a little charred&#8230;<\/p><\/div>\n<p>Add the halved grape tomatoes, cut side down.<\/p>\n<p>Tear some prosciutto into pieces and place them around the dough.<\/p>\n<p>Into the oven it goes.\u00a0 When it comes out nobody knows (your oven will decide that)!\u00a0 But, through repetition, I know that mine comes out in 8 minutes.<\/p>\n<p>Add a little fresh Arugula to the top, to taste, to finish it.<br \/>\nCut and Serve.<\/p>\n<div id=\"attachment_766\" style=\"width: 650px\" class=\"wp-caption alignright\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-766\" class=\"caption alignright size-full wp-image-766\" title=\"With a little wild arugula to finish you are going to enjoy your trip to Pizzeria Basta as much as I did!\" src=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2012\/02\/_mg_0171.jpg\" alt=\"\" width=\"640\" height=\"427\" align=\"right\" border=\"0\" srcset=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2012\/02\/_mg_0171.jpg 640w, https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2012\/02\/_mg_0171-300x200.jpg 300w\" sizes=\"(max-width: 640px) 100vw, 640px\" \/><p id=\"caption-attachment-766\" class=\"wp-caption-text\">With a little wild arugula to finish you are going to enjoy your trip to Pizzeria Basta as much as I did!<\/p><\/div>\n<p>This was a sweet, smokey, herby, &#8220;prosciuttoey&#8221; pizza.
