You can find the recipe in our archives.\u00a0 I got word that her whole family got a kick out of Googling &#8220;Mom&#8217;s Jalape\u00f1os&#8221; and seeing her recipe pop up in the number one spot!\u00a0 <\/p>\n<p><div id=\"attachment_741\" style=\"width: 650px\" class=\"wp-caption alignright\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-741\" class=\"caption alignright size-full wp-image-741\" src=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2012\/01\/photo - version 2.jpg\" border=\"0\" title=\"Isn't it great that someone can send photo text messages to someone else who is happily minding his own business?!!\" align=\"right\" width=\"640\" height=\"426\" srcset=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2012\/01\/photo%20-%20version%202.jpg 640w, https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2012\/01\/photo%20-%20version%202-300x200.jpg 300w\" sizes=\"(max-width: 640px) 100vw, 640px\" \/><p id=\"caption-attachment-741\" class=\"wp-caption-text\">Isn&#8217;t it great that someone can send photo text messages to someone else who is happily minding his own business?!!<\/p><\/div>Anyway, I was minding my own business, helping my own in-laws around the house during the holiday break, when I started to get text messages from Oregon about how much crab they had just pulled onto the boat.\u00a0 Torture! I imagined the feasts they would have.\u00a0 More torture!\u00a0 Then I started getting more texts about the feasts that they did have.\u00a0 Enough!\u00a0 I blocked it out of my mind and went back to my crab-less vacation. <\/p>\n<p>After the holidays, I got a pleasant surprise when they asked us over to help them eat some of the crab that they brought home.\u00a0 Done deal!\u00a0 We sat and cracked crab and I was introduced to a terrific new dipping sauce &#8212; a simple, spiced up version of Vietnamese Fish Sauce.\u00a0 I devoured my crab using only that.\u00a0 The salt\/spice combination was terrific with the steamed and then cooled crab.<\/p>\n<p><div id=\"attachment_742\" style=\"width: 650px\" class=\"wp-caption alignright\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-742\" class=\"caption alignright size-full wp-image-742\" src=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2012\/01\/_mg_0119.jpg\" border=\"0\" title=\"Kim sent me home with the crab and some chillis for the sauce.\" align=\"right\" width=\"640\" height=\"427\" srcset=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2012\/01\/_mg_0119.jpg 640w, https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2012\/01\/_mg_0119-300x200.jpg 300w\" sizes=\"(max-width: 640px) 100vw, 640px\" \/><p id=\"caption-attachment-742\" class=\"wp-caption-text\">Kim sent me home with the crab and some chillis for the sauce.<\/p><\/div>There were plenty more crabs left from their haul and they sent me home with some.\u00a0 Kim&#8217;s family had sent extra, perhaps knowing the torture I was put through over the holidays!\u00a0 I wanted to eat the crab while it was still relatively fresh.\u00a0 A light bulb went off in my head and I pulled a few frozen dough balls out of the freezer.\u00a0 It was time that I get to making some more pizzas for the website anyway. Why not come up with a couple to celebrate our friend, Mr. Dungeness?\u00a0 <\/p>\n<p>For this first version I decided to try to make a simple pizza and finish it off with the cooled crab on top after it cooked.\u00a0 This is a great way to enjoy a &#8220;special&#8221; ingredient in a not so common way &#8212; on a pizza.\u00a0 I wanted to build a pizza that supported and showcased the crab as it was, as close to how I had just eaten it: cracked, dipped, and devoured.\u00a0 So, here&#8217;s what I came up with.<\/p>\n<h2><strong>The Crab Season Pizza<\/strong><\/h2>\n<p><div id=\"attachment_743\" style=\"width: 650px\" class=\"wp-caption alignright\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-743\" class=\"caption alignright size-full wp-image-743\" src=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2012\/01\/_mg_0211.jpg\" border=\"0\" title=\"Go light on the oil.\" align=\"right\" width=\"640\" height=\"427\" srcset=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2012\/01\/_mg_0211.jpg 640w, https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2012\/01\/_mg_0211-300x200.jpg 300w\" sizes=\"(max-width: 640px) 100vw, 640px\" \/><p id=\"caption-attachment-743\" class=\"wp-caption-text\">Go light on the oil.<\/p><\/div>&#8211; Peter&#8217;s Classic Pizza Dough *Recipe (in PQ the archives)<br \/>&#8211; Peter&#8217;s Herb Oil *Recipe (likewise, in the archives)<br \/>&#8211; Shredded Mozzarella cheese<br \/>&#8211; Shredded Provolone cheese<br \/>&#8211; Preserved Lemon, or Lemon Curd<br \/>&#8211; Sliced Red Onion<br \/>&#8211; Grape Tomatoes<br \/>&#8211; Fresh Cracked Crab &#8212; Steamed and Cooled &#8212; or a quality canned Lump Crab Meat<br \/>&#8211; Chopped Kalamata olives<br \/>&#8211; Fresh Arugula<br \/>&#8211; Spiced Fish Sauce<\/p>\n<p>\u00a0<\/p>\n<p><strong><div id=\"attachment_744\" style=\"width: 650px\" class=\"wp-caption alignright\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-744\" class=\"caption alignright size-full wp-image-744\" src=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2012\/01\/_mg_0121.jpg\" border=\"0\" title=\"Fish Sauce, Chillis and Lemon\" align=\"right\" width=\"640\" height=\"427\" srcset=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2012\/01\/_mg_0121.jpg 640w, https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2012\/01\/_mg_0121-300x200.jpg 300w\" sizes=\"(max-width: 640px) 100vw, 640px\" \/><p id=\"caption-attachment-744\" class=\"wp-caption-text\">Fish Sauce, Chillis and Lemon<\/p><\/div>Spiced Fish Sauce Recipe for drizzling:<\/strong><br \/>&#8211; Vietnamese Fish Sauce (I have access to a lot of ethnic markets around here and this is readily available everywhere now, but especially at local Asian markets. Also, Kim generally monitors my Fish Sauce, Oyster Sauce and Chili Garlic Sauce pantry, as we all often get together and cook at each others houses.)<\/p>\n<p>&#8211; Thai Chili peppers or whatever heat level peppers you can tolerate<\/p>\n<p>&#8211; A fresh lemon or lime<\/p>\n<p><strong>Instructions:<\/strong><\/p>\n<p><em><strong>Spiced Fish Sauce Recipe<\/strong><\/em><\/p>\n<p>To make this great drizzle sauce, simply take a little fish sauce and chop up some Thai Chili peppers, to taste, add them to the sauce and squeeze a little fresh lemon or lime.\u00a0 You can make it on the same day you plan to use it but, if you can do this the day before, the sauce will take on even more of the flavors from the chili peppers.\u00a0 Store it in the refrigerator. <\/p>\n<p><em><strong>The Pizza<\/strong><\/em><\/p>\n<p><div id=\"attachment_745\" style=\"width: 650px\" class=\"wp-caption alignright\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-745\" class=\"caption alignright size-full wp-image-745\" src=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2012\/01\/_mg_0213.jpg\" border=\"0\" title=\"Keep the ingredients in balance and focus on the coming attraction.\" align=\"right\" width=\"640\" height=\"427\" srcset=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2012\/01\/_mg_0213.jpg 640w, https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2012\/01\/_mg_0213-300x200.jpg 300w\" sizes=\"(max-width: 640px) 100vw, 640px\" \/><p id=\"caption-attachment-745\" class=\"wp-caption-text\">Keep the ingredients in balance and focus on the coming attraction.<\/p><\/div>Preheat your oven to the highest temperature, about 550 degrees, for at least an hour prior to cooking to make sure to get your pizza stone up to temperature.<\/p>\n<p>Spread out and shape your dough, and cover it lightly with some herb oil. <\/p>\n<p>Add a little grated Mozzarella and a touch less of the provolone, or other favorite cheese.\u00a0 <\/p>\n<p>*NOTE:\u00a0 I used a limited amount of each ingredient in order to give the crab center stage.\u00a0 If you make this a few times, you can adjust the amounts each time until you get it just right.\u00a0 For this pizza I think a less is more approach is best.<\/p>\n<p>Add a few dabs of the Lemon Curd around the dough &#8211; for flavor accents in the finished pizza.\u00a0 *You could skip this and drizzle the pizza with a little fresh squeezed lemon juice instead, or do both.<\/p>\n<p><div id=\"attachment_746\" style=\"width: 650px\" class=\"wp-caption alignright\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-746\" class=\"caption alignright size-full wp-image-746\" src=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2012\/01\/_mg_0216.jpg\" border=\"0\" title=\"A nice bake, not too long.  I didn't want to overcook this one. \" align=\"right\" width=\"640\" height=\"427\" srcset=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2012\/01\/_mg_0216.jpg 640w, https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2012\/01\/_mg_0216-300x200.jpg 300w\" sizes=\"(max-width: 640px) 100vw, 640px\" \/><p id=\"caption-attachment-746\" class=\"wp-caption-text\">A nice bake, not too long.  I didn&#8217;t want to overcook this one.<\/p><\/div>Add the sliced red onions and halved grape tomatoes.\u00a0 Place them open side down, which helps them sit there when you slide the pizza in the oven and allows the tomato to hold more moisture &#8212; almost acting like a steaming chamber for itself. <\/p>\n<p>Into the oven with your pizza.\u00a0 <br \/>*Note: When I place my first pizza in the oven, I change it over to Convection Bake which adjusts the temperature down to 525 degrees, but the airflow seems to help cook the pizza much faster.\u00a0 I am getting close to 6 &#8211; 7 minute pizzas regularly in my home oven.\u00a0 Cooking times are not a science and are more often than not a moving target from one pizza to the next.<\/p>\n<p><div id=\"attachment_747\" style=\"width: 650px\" class=\"wp-caption alignright\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-747\" class=\"caption alignright size-full wp-image-747\" src=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2012\/01\/_mg_0219.jpg\" border=\"0\" title=\"Break up the crab and distribute to make sure you get a good piece each bite!\" align=\"right\" width=\"640\" height=\"427\" srcset=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2012\/01\/_mg_0219.jpg 640w, https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2012\/01\/_mg_0219-300x200.jpg 300w\" sizes=\"(max-width: 640px) 100vw, 640px\" \/><p id=\"caption-attachment-747\" class=\"wp-caption-text\">Break up the crab and distribute to make sure you get a good piece each bite!<\/p><\/div>When the pizza comes out, add a few chopped Kalamata Olives and the cool crab.\u00a0 If you have been reading my recipes, this seems to be a running theme of adding cool toppings after the bake.\u00a0 Crab is the perfect ingredient to do that with.\u00a0 It will slowly warm up as it sits on the pizza, so make sure you enjoy a bite while the temperature contrast is there.\u00a0 I love that!<\/p>\n<p>Drizzle a little of the Fish Sauce with Chillis onto the crab (ahhh, the &#8220;secret ingredient&#8221; to this incredible pie!).<\/p>\n<p>Top with some fresh arugula<\/p>\n<p>Cut and Serve!\u00a0 <\/p>\n<p><div id=\"attachment_748\" style=\"width: 650px\" class=\"wp-caption alignright\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-748\" class=\"caption alignright size-full wp-image-748\" src=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2012\/01\/_mg_0226.jpg\" border=\"0\" title=\"This is really like a delicious warm crab sandwich.
