at home anyway.\u00a0 You prep and throw a few pies together because it&#8217;s a bit of work and the operation does create a bit of a mess no matter how you manage it.\u00a0 When you add in photography as part of your <em>mise en place<\/em> you get flour and ingredients all over the place &#8212; but it&#8217;s so much fun!\u00a0 Besides all that, pizza is also <span style=\"text-decoration: underline;\">meant<\/span> to be eaten as a left over.\u00a0 It&#8217;s good cold the next day for breakfast straight out of the fridge and how many things can you say that about?<\/p>\n<p><div id=\"attachment_727\" style=\"width: 650px\" class=\"wp-caption alignright\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-727\" class=\"caption alignright size-full wp-image-727\" src=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2011\/12\/_mg_9806.jpg\" border=\"0\" title=\"Pre-cook the sausage leaving room for it to finish cooking while it bakes on the pizza.\" align=\"right\" width=\"640\" height=\"427\" srcset=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2011\/12\/_mg_9806.jpg 640w, https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2011\/12\/_mg_9806-300x200.jpg 300w\" sizes=\"(max-width: 640px) 100vw, 640px\" \/><p id=\"caption-attachment-727\" class=\"wp-caption-text\">Pre-cook the sausage leaving room for it to finish cooking while it bakes on the pizza.<\/p><\/div>I set out to make my 4th version of the Signature Pizza using a Hot Italian Sausage as the anchovy replacement.\u00a0 As I was shopping, I thought of the Buonchristiani Lamb Fennel Sausage Pizza I first made earlier this past year (see archives) and decided to pick up some fresh goat cheese to go toward that concept, and to also try changing another main ingredient to see what would happen.\u00a0 So, here I was about to make version 4.\u00a0 I think there was a leak in my glass.\u00a0 I kept having to refill it as I made my pizzas.\u00a0 I have to say, I think I enjoy having a sip of good wine or beer while I&#8217;m cooking as much as I do when eating the finished product.\u00a0 In the same sense I think, for me, the act of cooking is half the fun of eating,<div id=\"attachment_728\" style=\"width: 650px\" class=\"wp-caption alignright\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-728\" class=\"caption alignright size-full wp-image-728\" src=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2011\/12\/_mg_9858.jpg\" border=\"0\" title=\"Herb Oil, Burrata, Goat Cheese\" align=\"right\" width=\"640\" height=\"427\" srcset=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2011\/12\/_mg_9858.jpg 640w, https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2011\/12\/_mg_9858-300x200.jpg 300w\" sizes=\"(max-width: 640px) 100vw, 640px\" \/><p id=\"caption-attachment-728\" class=\"wp-caption-text\">Herb Oil, Burrata, Goat Cheese<\/p><\/div> so why wouldn&#8217;t the tasting of wine or beer while you pull your ingredients together make for an enhanced experience just as when you pair the final dish?\u00a0 I think this further explains why food is so important to us.\u00a0 It really is a a gift that we gather around on a daily basis as we share our lives with one another.\u00a0 I enjoy sharing a home cooked meal with friends, either here or at their house, but for all of these reasons, I think some of my favorite dinner parties are when you gather and cook together, essentially making the dinner prep part of the dinner party.\u00a0 <\/p>\n<p>But, this time I was alone in the kitchen.\u00a0 The family was circling, but busy doing other things while they waited for the next pizza to emerge from the oven.\u00a0 Alone, I had to march on, knowing that they would soon gather and, hopefully, enjoy what I was making.\u00a0 I know Owen would.\u00a0 He&#8217;s like Mikey &#8211; he eats everything! <\/p>\n<p><div id=\"attachment_729\" style=\"width: 650px\" class=\"wp-caption alignright\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-729\" class=\"caption alignright size-full wp-image-729\" src=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2011\/12\/_mg_9860.jpg\" border=\"0\" title=\"Sausage, Sliced Chilis, a few Kalamatas\" align=\"right\" width=\"640\" height=\"427\" srcset=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2011\/12\/_mg_9860.jpg 640w, https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2011\/12\/_mg_9860-300x200.jpg 300w\" sizes=\"(max-width: 640px) 100vw, 640px\" \/><p id=\"caption-attachment-729\" class=\"wp-caption-text\">Sausage, Sliced Chilis, a few Kalamatas<\/p><\/div>The ingredients on top of this version of the Signature Pizza are basically the same as the previous except for the substitution of the Sausage and Goat Cheese.\u00a0 As I was assembling the pizza an avocado, sitting in a bowl on the counter, caught my eye.\u00a0 It was ripe.\u00a0 Okay, why not?\u00a0 When life puts a chalkboard sign in your path, pay attention!\u00a0 While the pizza cooked, I decided to cut it open and throw it on the pizza after.\u00a0 It was green and would certainly look cool, and I thought it would be an interesting texture and mellow flavor accent on top of the spicier sausage and distinct goat cheese.\u00a0 I have a nice bottle of balsamic vinegar that a friend gave me from the Central Coast.\u00a0 It&#8217;s surprising that I still have it, because it&#8217;s so good you feel compelled to drink it, not drizzle it!\u00a0 At the end, this sweet vinegary drizzle proved to be the final touch of a lucky accident.\u00a0 <\/p>\n<p><div id=\"attachment_730\" style=\"width: 650px\" class=\"wp-caption alignright\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-730\" class=\"caption alignright size-full wp-image-730\" src=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2011\/12\/_mg_9862.jpg\" border=\"0\" title=\"Using what you have, or using what is fresh will almost always give you a better meal.\" align=\"right\" width=\"640\" height=\"427\" srcset=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2011\/12\/_mg_9862.jpg 640w, https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2011\/12\/_mg_9862-300x200.jpg 300w\" sizes=\"(max-width: 640px) 100vw, 640px\" \/><p id=\"caption-attachment-730\" class=\"wp-caption-text\">Using what you have, or using what is fresh will almost always give you a better meal.<\/p><\/div>This is a terrific pizza!\u00a0 There are layers and layers of flavors that come at you from between the cool topping of avocado to the warm crusty dough on the bottom.\u00a0 The <em>Birra Basta, <\/em>with it&#8217;s fruity earthiness, handled this quite well.\u00a0 Each of my four variations of the Signature Challenge Pizza (see previous postings), in fact, delivered a slight variation of flavors to work with,\u00a0 challenge, and blend with the Bruery&#8217;s beer.\u00a0 What a great way to experiment on playing with a pizza and pairing concept, coming up with a number of similar but interesting variations.\u00a0 It was also a pizza feast!\u00a0 I&#8217;m still a fan of Kelly Whitaker&#8217;s original anchovy version, but I sure had fun creating some options to share with my family, who all agreed that these were some of the best pizzas yet!<\/p>\n<p><em><span style=\"text-decoration: underline;\"><strong>Brad&#8217;s Home Made Pizza Quest Challenge Pizza &#8211; with Hot Italian Sausage, Goat Cheese and a Sliced Avocado Topping:<\/strong><\/span><\/em><\/p>\n<p><div id=\"attachment_731\" style=\"width: 650px\" class=\"wp-caption alignright\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-731\" class=\"caption alignright size-full wp-image-731\" src=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2011\/12\/_mg_9863.jpg\" border=\"0\" title=\"Just out of the oven it's all melted together.\" align=\"right\" width=\"640\" height=\"427\" srcset=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2011\/12\/_mg_9863.jpg 640w, https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2011\/12\/_mg_9863-300x200.jpg 300w\" sizes=\"(max-width: 640px) 100vw, 640px\" \/><p id=\"caption-attachment-731\" class=\"wp-caption-text\">Just out of the oven it&#8217;s all melted together.<\/p><\/div>Pizza Quest Signature Beer Pizza Dough\u00a0 *Any dough will work, but I have to say it&#8217;s worth it to make this dough.<\/p>\n<p>Burrata cheese<\/p>\n<p>Fresh Goat Cheese<\/p>\n<p>Hot Italian Sausage &#8211; or, any other sausage you may feel like trying<\/p>\n<p>Sliced Chilis (Hot or Mild)<\/p>\n<p>Preserved Lemon\u00a0\u00a0 *Kelly Whitaker made his own in a pressure cooker.\u00a0 Lacking the time and skills, I found a baking product called Lemon Curd to use instead.\u00a0 It gave a nice tart lemon flavor in bursts, as well as a sweet finish.<\/p>\n<p>Greens\u00a0 *I had some wild arugula around.\u00a0 This worked great.<\/p>\n<p>Kalamata Olives &#8211; I had picked up some at the market and decided to use a few.<\/p>\n<p>Fennel Salt<br \/> *I didn&#8217;t have that, so I diced up a little fennel greens and sprinkled some sea salt to finish the pizza.<\/p>\n<p>Sliced Avocados<\/p>\n<p>Good quality Balsamic Vinegar to drizzle<\/p>\n<p><strong>INSTRUCTIONS:<\/strong><br \/><div id=\"attachment_732\" style=\"width: 650px\" class=\"wp-caption alignright\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-732\" class=\"caption alignright size-full wp-image-732\" src=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2011\/12\/_mg_9877.jpg\" border=\"0\" title=\"Add the avocado and drizzle with the balsamic. Cut to serve.<\/p><\/div>Spread the dough to your desired size.\u00a0 <\/p>\n<p>Add Peter&#8217;s Herb Oil to dough (see archives) <\/p>\n<p>Add the Goat Cheese and then put a little Burrata in the center (bear in mind that it will melt and cover).<\/p>\n<p>Add the pre-cooked, but not browned sausage (it will brown and crisp in the oven on the pizza)<\/p>\n<p>Add the sliced Chilis<\/p>\n<p>Add a few pinched Kalamata olives for little salty briny flavor bursts<\/p>\n<p>Add the lemon curd, or preserved lemon in little dabs around the pizza.\u00a0 This is meant to be a surprise, not an all over flavor.\u00a0 It&#8217;s not a flavor you would think of for pizza, but when used sparingly I&#8217;ve become a big fan.\u00a0 That may have to do with the fact that I have a <em>Birra Basta <\/em>sitting next to me that Patrick Rue and his team infused with lemon peel during the brewing.\u00a0 Maybe&#8230;<\/p>\n<p><div id=\"attachment_733\" style=\"width: 650px\" class=\"wp-caption alignright\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-733\" class=\"caption alignright size-full wp-image-733\" src=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2011\/12\/_mg_9876.jpg\" border=\"0\" title=\"The final ingredient, of course, is a sip of Birra Basta to complete the pairing.
