When we were with Kelly Whitaker at Pizzeria Basta at the beginning of this journey we did make a test dough with a Bruery beer in it.\u00a0 It was great.\u00a0 I&#8217;ll definitely have to follow this up with a liquid beer dough for those of us who are just home cooks). <\/p>\n<p><div id=\"attachment_712\" style=\"width: 650px\" class=\"wp-caption alignright\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-712\" class=\"caption alignright size-full wp-image-712\" src=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2011\/12\/_mg_9817.jpg\" border=\"0\" title=\"I like how the Belgian Endive works on a pizza.  It is thick enough to retain a lot of it's moisture. The edges char, but you get a warm juicy bit in the thicker parts of it.<\/p><\/div>I also think about how lucky we were to have met Kelly and his restaurant partner Alan Henkin.\u00a0 They took this idea and ran with it.\u00a0 They gave a lot of time, and put in a lot of effort, to create a one of a kind, truly unique pizza.\u00a0 I was like a kid in a candy store watching it all happen.\u00a0 Peter, Kelly, and Alan were also like kids in a candy store when we visited The Bruery, first taking a tour and then getting to make pizzas right there outside the brewery door in a mobile wood-fired oven.\u00a0 I can only assume that owner Patrick Rue, and Tyler and all the guys at The Bruery felt equally delighted as they got to test their brewing skills to match the &#8220;Signature Pizza.&#8221;<\/p>\n<p>\u00a0<\/p>\n<p><div id=\"attachment_713\" style=\"width: 650px\" class=\"wp-caption alignright\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-713\" class=\"caption alignright size-full wp-image-713\" src=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2011\/12\/_mg_9814.jpg\" border=\"0\" title=\"Thinly sliced sopressata and a mild chili\" align=\"right\" width=\"640\" height=\"427\" srcset=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2011\/12\/_mg_9814.jpg 640w, https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2011\/12\/_mg_9814-300x200.jpg 300w\" sizes=\"(max-width: 640px) 100vw, 640px\" \/><p id=\"caption-attachment-713\" class=\"wp-caption-text\">Thinly sliced sopressata and a mild chili<\/p><\/div>When Kelly made the final batch of pizzas in Denver for what we called &#8220;The Big Reveal,&#8221; he brought a variation for the anchovies.\u00a0 I actually requested that he bring something along so we could try a a different variation with the newly created <em>Birra Basta <\/em>and see how that went with it as well.\u00a0 Kelly, being Kelly brought a house cured pork belly.\u00a0 If you have read any of my writing here you know I am a huge fan of salted\/cured pork products.\u00a0 Well, that pizza was definitely a winning combination with the <em>Birra Basta<\/em> as well.\u00a0 So, here at home, I thought it only fitting to try a few versions of my own.\u00a0 On top of that, my family, other than my son Owen, doesn&#8217;t much like fish.\u00a0 Anchovies, I learned from them, are at or near the top of the list when you don&#8217;t like fish!\u00a0 <\/p>\n<p><div id=\"attachment_714\" style=\"width: 650px\" class=\"wp-caption alignright\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-714\" class=\"caption alignright size-full wp-image-714\" src=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2011\/12\/_mg_9820.jpg\" border=\"0\" title=\"Looking pretty good!\" align=\"right\" width=\"640\" height=\"427\" srcset=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2011\/12\/_mg_9820.jpg 640w, https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2011\/12\/_mg_9820-300x200.jpg 300w\" sizes=\"(max-width: 640px) 100vw, 640px\" \/><p id=\"caption-attachment-714\" class=\"wp-caption-text\">Looking pretty good!<\/p><\/div>For this first variation I used a mild Sopressata salami, as well as some thinly sliced Anaheim Chili Peppers.\u00a0 The rest was basically the same as the original.\u00a0 I wanted to push this pizza a little toward Kelly&#8217;s house cured pork, but also adding another accent with the chilies.\u00a0 It works!\u00a0 There&#8217;s a lot going on here, from the savory sopressata, buratta cheese, and herb oil, through the chili&#8217;s announcement that it&#8217;s joined the party, to the subtle ping of the lemon curd popping in and saying &#8220;Hello there!&#8221; <\/p>\n<p>Oh, and it did go down quite well with our &#8220;friend,&#8221; the glass of <em>Birra Basta <\/em>(yes, I managed to acquire a keg of that amazing brew now living in my special kegster fridge) playing off some of the same flavor notes that Kelly established, and adding a few more to challenge the pairing.<\/p>\n<p><span style=\"text-decoration: underline;\"><em><strong>Brad&#8217;s Home Made Pizza Quest Challenge Pizza &#8211; The Sopressata Edition:<br \/><\/strong><\/em><\/span><br \/><div id=\"attachment_715\" style=\"width: 650px\" class=\"wp-caption alignright\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-715\" class=\"caption alignright size-full wp-image-715\" src=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2011\/12\/_mg_9822.jpg\" border=\"0\" title=\"Out of the oven....\" align=\"right\" width=\"640\" height=\"427\" srcset=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2011\/12\/_mg_9822.jpg 640w, https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2011\/12\/_mg_9822-300x200.jpg 300w\" sizes=\"(max-width: 640px) 100vw, 640px\" \/><p id=\"caption-attachment-715\" class=\"wp-caption-text\">Out of the oven&#8230;.<\/p><\/div>Pizza Quest Signature Beer Pizza Dough <br \/> (*Any dough will work, but I have to say it&#8217;s worth it to make this dough &#8212; see the archives in our Instructional section)<\/p>\n<p>Squash Blossoms <br \/> (*I couldn&#8217;t find any, so I substituted a baby Belgian white endive)<br \/>Burrata Cheese<\/p>\n<p>Preserved Lemon (*Kelly Whitaker made his own in a pressure cooker.\u00a0 Lacking the time and skills, I found a baking product called Lemon Curd to use instead.\u00a0 It gave a nice tart lemon flavor in bursts as well as a sweet finish.)<\/p>\n<p>Sopressata salami (mild, or slightly spicy)<\/p>\n<p>Anaheim Chili Peppers, or any other chili such as a Hatch, or even thinly sliced Jalapenos if you want a little more heat.<\/p>\n<p>Fresh Greens<br \/> (*I had some wild arugula around.\u00a0 This worked great.)<\/p>\n<p>Fennel Salt<br \/> (*I didn&#8217;t have that, so I diced up a little fennel greens and sprinkled some sea salt to finish the pizza.)<\/p>\n<p>Peter&#8217;s Herbed Oil or any flavored herbed oil (see archives)<\/p>\n<p>\u00a0<\/p>\n<p><span style=\"text-decoration: underline;\"><strong>Instructions:<\/strong><\/span><\/p>\n<p>Spread the dough to your desired size.\u00a0 <\/p>\n<p>Add the Burrata Cheese (considering how it will melt, spread, and cover).<\/p>\n<p>Lay out the endive leaves.<\/p>\n<p>Add the lemon curd, or preserved lemon, in little dabs around the pizza.\u00a0 This is meant to be a surprise, not a dominating flavor.\u00a0 It&#8217;s not a flavor you would think of for pizza but, as you&#8217;ll see in some coming recipes, I&#8217;ve become a big fan.\u00a0 That may have to do with the fact that I have a mug of <em>Birra Basta<\/em> sitting next to me that Patrick infused with Lemon Peel during the brewing.\u00a0 Maybe&#8230;<\/p>\n<p>Add the Sopressata and Chili Slices<\/p>\n<p>Into the oven it goes\u2026<\/p>\n<p><div id=\"attachment_716\" style=\"width: 650px\" class=\"wp-caption alignright\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-716\" class=\"caption alignright size-full wp-image-716\" src=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2011\/12\/_mg_9827.jpg\" border=\"0\" title=\"Add the greens to finish. Cut and Serve!<\/p><\/div>While the pizza cooks, toss some greens with a little of the herb oil or a favorite dressing.
