The Pizza, or the Biere?<\/p><\/div>Another idea came along about 6 months ago and many of you have been following our quest to challenge Patrick Rue and his brewers over at The Bruery.\u00a0 It was quite an experience watching and living that idea as it blossomed from it&#8217;s inception to us chasing this unique beer and pizza pairing across the western United States.\u00a0 I find myself at home now, thinking back on the whole thing, and I&#8217;m smiling.\u00a0 It was just amazing to be me standing with the likes of Peter Reinhart, Kelly Whitaker and Patrick Rue.\u00a0 My father is an actor.\u00a0 I remember when I was younger &#8211; oh, so much younger. I have to make a lot of pizza while it lasts&#8230;<\/p><\/div>One of the benefits of being a Pizza Quester is that you get a few perks.\u00a0 We don&#8217;t get many, but the few we&#8217;ve gotten have been nice indeed.\u00a0 Patrick offered me a keg of Birra Basta since they didn&#8217;t bottle it.\u00a0 I didn&#8217;t have a kegerator, but always wanted one.\u00a0 So, now I have a kegerator and a keg of Birra Basta &#8211; a beer brewed by a great brewery that was at least partially inspired by my ideas.\u00a0 How cool is that?\u00a0 <\/p>\n<p>Now, what better way to enjoy the beer than to make the pizza it was created for?<\/p>\n<p>Here&#8217;s my first version of the pizza that Kelly created to rest atop of Peter&#8217;s Signature Bruery Pizza Dough.\u00a0 I will follow this up with a few more variations on this pizza in the coming weeks, which all turned out amazing as well.<\/p>\n<p>\u00a0<\/p>\n<p><strong>Brad&#8217;s Home Made Pizza Quest Challenge Pizza:<\/strong><\/p>\n<p><div id=\"attachment_697\" style=\"width: 650px\" class=\"wp-caption alignright\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-697\" class=\"caption alignright size-full wp-image-697\" src=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2011\/11\/_mg_9770.jpg\" border=\"0\" title=\"Hot out of the oven. Waiting for the finishing touches.<\/p><\/div><strong>-Pizza Quest Signature Beer Pizza Dough <\/strong><br \/> *Any dough will work, but I have to say it&#8217;s worth it to make this dough (you can get the flour by contacting Central Milling &#8212; see the link to their site at the top of this page).<br \/><strong>-Squash Blossoms <\/strong><br \/> *I couldn&#8217;t find any, so I substituted baby Belgian endives<br \/><strong>-Burrata Cheese<\/strong> &#8212; it&#8217;s a blend of fresh mozzarella filled with creme fraiche or mascarpone cheese.<br \/><strong>-Preserved Lemon <\/strong><br \/> *Kelly Whitaker made his own in a pressure cooker.\u00a0 Lacking the time and skills, I found a baking product called Lemon Curd to use instead.\u00a0 It gave a nice tart lemon flavor in bursts as well as a sweet finish.<br \/><strong>-White Anchovies<\/strong><br \/> *I found a marinaded white anchovy at Whole Foods.\u00a0 It was delicious &#8211; was dressed<div id=\"attachment_698\" style=\"width: 650px\" class=\"wp-caption alignright\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-698\" class=\"caption alignright size-full wp-image-698\" src=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2011\/11\/_mg_9745.jpg\" border=\"0\" title=\"You can cut these up, or use whole.\" align=\"right\" width=\"640\" height=\"427\" srcset=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2011\/11\/_mg_9745.jpg 640w, https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2011\/11\/_mg_9745-300x200.jpg 300w\" sizes=\"(max-width: 640px) 100vw, 640px\" \/><p id=\"caption-attachment-698\" class=\"wp-caption-text\">You can cut these up, or use whole.<\/p><\/div> in a lemony\/herby oil &#8211; which I used to toss into the greens.<br \/><strong>-Greens<\/strong><br \/> *I had some wild arugula around.\u00a0 This worked great.<br \/><strong>-Fennel Salt<\/strong><br \/> *I didn&#8217;t have that, so I diced up a little fennel greens and sprinkled some sea salt to finish the pizza.<\/p>\n<p>\u00a0<\/p>\n<p>\u00a0<\/p>\n<p>\u00a0<\/p>\n<p><strong>INSTRUCTIONS:<\/strong><\/p>\n<p><div id=\"attachment_699\" style=\"width: 650px\" class=\"wp-caption alignright\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-699\" class=\"caption alignright size-full wp-image-699\" src=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2011\/11\/_mg_9774.jpg\" border=\"0\" title=\"Place cool greens and anchovies over hot pizza. \" align=\"right\" width=\"640\" height=\"427\" srcset=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2011\/11\/_mg_9774.jpg 640w, https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2011\/11\/_mg_9774-300x200.jpg 300w\" sizes=\"(max-width: 640px) 100vw, 640px\" \/><p id=\"caption-attachment-699\" class=\"wp-caption-text\">Place cool greens and anchovies over hot pizza.<\/p><\/div>Spread the dough to your desired size.\u00a0 <\/p>\n<p>Add the Burrata Cheese around the center of the dough (it will melt and spread).<\/p>\n<p>Lay out the endive leaves. <\/p>\n<p>Into the oven it goes\u2026<\/p>\n<p>While the pizza cooks, toss some greens with the white anchovies.\u00a0 Again, these were dressed in a nice lemony herby oil.\u00a0 I didn&#8217;t add anything else to the salad.<\/p>\n<p>Take the pizza out after 8-10 minutes.<\/p>\n<p><div id=\"attachment_700\" style=\"width: 650px\" class=\"wp-caption alignright\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-700\" class=\"caption alignright size-full wp-image-700\" src=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2011\/11\/_mg_9786.jpg\" border=\"0\" title=\"Cut. Take Photo.<\/p><\/div>Add the lemon curd, or preserved lemon in little dabs around the pizza.\u00a0 This is meant to be a surprise, not an all over flavor.\u00a0 It&#8217;s not a flavor you would think of for pizza but, as you&#8217;ll see in some coming recipes, I&#8217;ve become a big fan.\u00a0 That may have to do with the fact that I have a Birra Basta sitting next to me that Patrick infused with Lemon Peel during the brewing.\u00a0 Maybe&#8230;<\/p>\n<p>Lay the salad mixture over the hot pizza.<\/p>\n<p>Sprinkle the fennel and a little sea salt across the pizza (sparingly).<\/p>\n<p>Cut and Serve\u2026<\/p>\n<p>Oh, and pour your second glass of bier!<\/p>\n<p><div id=\"attachment_701\" style=\"width: 650px\" class=\"wp-caption alignright\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-701\" class=\"caption alignright size-full wp-image-701\" src=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2011\/11\/_mg_9788.jpg\" border=\"0\" title=\"The flavors go with the beer. The dough goes with the beer!<\/p><\/div>This pairing works.\u00a0 The crust sets it all up and you are literally experiencing a flavor affair in your mouth.\u00a0 You then take a sip and it becomes something else, similar but altogether different.\u00a0 Enjoyable is a word that comes to mind.<\/p>\n<p>I ate this pizza all by myself.\u00a0 I had some other ideas along these lines that I wanted to share with my family &#8211;
