Nice crust with a little char!<\/p><\/div>\n<p>&nbsp;<\/p>\n<p><strong>The Pizza:<\/strong><\/p>\n<ul>\n<li>Peter&#8217;s Neapolitan Dough Recipe w\/King Arthur All Purpose Flour <a href=\"https:\/\/www.fornobravo.com\/pizzaquest\/recipe-neapolitan-pizza-dough\/\">*Link<\/a><\/li>\n<li>Peter&#8217;s basic sauce recipe w\/Bianco Dinapoli Tomatoes <a href=\"https:\/\/www.fornobravo.com\/pizzaquest\/all-purpose-pizza-sauce\/\">*Link<\/a><\/li>\n<li>Fresh Mozzarella (<em>fior di latte)<\/em><\/li>\n<li>Regular Mozzarella (whole milk or low fat)<\/li>\n<li>Spicy Soppressata<\/li>\n<li>Fresh Basil (extra for the sauce and as a topping)<\/li>\n<li>Spicy Pickled Asparagus (I used jalape\u00f1os)\u00a0<a href=\"https:\/\/www.youtube.com\/watch?v=wh670ZfHBrg\">*Link to Recipe<\/a><\/li>\n<\/ul>\n<p>Use 8 or 9 oz dough balls, stretch and top with the sauce, cheeses, soppressata,and about 8 leaves of basil. Slide onto a preheated baking steel or baking stone in an oven set at 550 degrees, on convection bake. \u00a0About 7 to 8 minutes later, out comes the pizza. \u00a0I finished it with about 8 spears of the asparagus and some more fresh basil.<\/p>\n<p>&nbsp;<\/p>\n<div id=\"attachment_6829\" style=\"width: 310px\" class=\"wp-caption aligncenter\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-6829\" class=\"size-medium wp-image-6829\" src=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2022\/07\/IMG_1309-300x225.jpeg\" alt=\"\" width=\"300\" height=\"225\" srcset=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2022\/07\/IMG_1309-300x225.jpeg 300w, https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2022\/07\/IMG_1309-1024x768.jpeg 1024w, https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2022\/07\/IMG_1309-768x576.jpeg 768w, https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2022\/07\/IMG_1309.jpeg 1280w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><p id=\"caption-attachment-6829\" class=\"wp-caption-text\">Cool spicy pickled asparagus and fresh basil placed on after the bake!<\/p><\/div>\n<p>&nbsp;<\/p>\n<p>Being baked in the kitchen oven, this dough isn&#8217;t going to perform the same as if it was in the wood fired oven. \u00a0It&#8217;s baking for 7-8 minutes instead of 2-3 minutes in the wood oven. \u00a0So, it will dry out more. \u00a0It&#8217;s still good, just different &#8212; you already know that going in. \u00a0So, we sliced the pizza and Shanna and I pick up our slices and notice that they are firm, thin &#8220;solid&#8221; slices&#8230;no drooping at the point. \u00a0After first bites we both looked at each other and said, &#8220;Wow!&#8221; \u00a0 As we continued to eat the slices, we&#8217;re continuing with the wow&#8217;s and adding in some, &#8220;That&#8217;s really good&#8217;s!&#8221; as we go. \u00a0This was a great combination of toppings! \u00a0The sweet\/slightly acidic sauce with the thin slices of savory soppressata and milky cheeses were really enhanced by the tangy &#8220;pickley&#8221; asparagus, with a little kick provided by both the asparagus spices and the soppressata.<\/p>\n<p>&nbsp;<\/p>\n<div id=\"attachment_6830\" style=\"width: 310px\" class=\"wp-caption aligncenter\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-6830\" class=\"wp-image-6830 size-medium\" src=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2022\/07\/IMG_1310-300x225.jpeg\" alt=\"\" width=\"300\" height=\"225\" srcset=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2022\/07\/IMG_1310-300x225.jpeg 300w, https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2022\/07\/IMG_1310-1024x768.jpeg 1024w, https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2022\/07\/IMG_1310-768x576.jpeg 768w, https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2022\/07\/IMG_1310.jpeg 1280w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><p id=\"caption-attachment-6830\" class=\"wp-caption-text\">This crust was really nice. Definitely not a &#8220;wood fired&#8221; type of crust, but flavorful and still soft inside.<span style=\"font-size: 16px\">\u00a0<\/span><\/p><\/div>\n<p>&nbsp;<\/p>\n<p><span style=\"font-size: 16px\">As I was eating one of my slices, I mentioned to Shanna that the crust was really good. \u00a0She agreed. \u00a0It wasn&#8217;t a soft, charred wood fired pizza crust, but was really tasty &#8212; more New York than Naples. \u00a0It was carmelized and crunchy and yet still soft in the middle.<\/span><\/p>\n<p>I love a good pizza. \u00a0This one definitely got added to our memorable pizza list. <strong>But Wait &#8212; Maybe if we&#8217;d started with the wood-fired pizza first and the home oven pizza second the reverse would have happened. \u00a0Who knows?
