Delish!<\/p><\/div>\n<p>What day is it? \u00a0For that matter what time is it?<\/p>\n<p>I woke up the other night after a &#8220;nap&#8221; and heard my kids downstairs talking and laughing. \u00a0I walked downstairs and my son was sitting playing a video game talking to my daughter who was at the kitchen table painting &#8211; making some art. \u00a0It was about 3 AM!\u00a0 I grabbed a glass of water and chatted with them and went back to bed. \u00a0Being locked down has changed a few things hasn&#8217;t it.<\/p>\n<p>Early on we did some shopping in long lines to stock up on some bulk items and make sure we had food we could make and that would last and be good for left over meals. Anytime I fire up the oven, while it&#8217;s heating up, I&#8217;m usually roasting up some chilis and red onions!<\/p><\/div>\n<p>I could really go for a couple of chicken tacos, a burger, or a bowl of ramen noodles right now! \u00a0Yeah, I can order any of that and go pick it up, but that&#8217;s not what I&#8217;m talking about. \u00a0What I am really craving is walking in and sitting and relaxing in any of my local restaurants and enjoying the meal and not doing any dishes!! \u00a0I\u2019m not craving anything fancy or expensive, I just want the simplicity and relaxation of enjoying a meal out with family and friends and seeing others doing the same! \u00a0I can&#8217;t wait to sign my name on a waiting list. \u00a0Oh the joy and freedom of such a thing is almost unimaginable today isn&#8217;t it?!\u00a0 But, you know&#8230;that&#8217;s not where we&#8217;re at in the world today.<\/p>\n<p>Cooking. \u00a0Cleaning. \u00a0Cooking. \u00a0Cleaning. \u00a0Cooking. \u00a0Cleaning. \u00a0Each day goes by and we throw together another casserole to keep the lions at bay.\u00a0 (Oh yes, the kids are lions!)<\/p>\n<p>I had made some dough early on during the crisis and ended up freezing it because getting the ingredients I want and need for making a good pizza was pretty difficult for a while, with long lines at grocery stores. Chicken enchiladas. Lasagna. Given the circumstances this was perfect for what I needed.<\/p><\/div>\n<p>It\u2019s nothing new for me to make pizzas with ingredients I have at home, or find in a local market. This chili &#8220;relish&#8221; is great on anything you want to add a little spice to like morning eggs or even a sandwich.<\/p><\/div>\n<p><strong>Left-Over Pesto Turkey Meatballs<\/strong><\/p>\n<p>These were pretty simple and sort of just thrown together for a big pasta dinner that would also provide the family a nice and easy bit of left-overs to warm up and eat for another day or two.<\/p>\n<p>Add the following to ground turkey and form into meatballs:<\/p>\n<ul>\n<li>2 lbs Ground Turkey<\/li>\n<li>Chopped Onion &#8211; medium<\/li>\n<li>1 Cup Bread Crumbs &#8211; maybe more if you feel it needs it.<\/li>\n<li>One Egg<\/li>\n<li>1\/2 &#8211; 3\/4 cup of Pesto *Start with a 1\/2 cup. \u00a0Add more if you feel you want a little more pesto flavor.<\/li>\n<li>1\/3 &#8211; 1\/2 cup of grated Parmesan Cheese<\/li>\n<li>Salt and Pepper<\/li>\n<li>1\/2 Tbs of Calabrian Chilis chopped and snuck in there before your daughter realizes it.<\/li>\n<\/ul>\n<p>Mix and form into meatballs, about 1.5&#8243; &#8211; 2&#8243; in diameter, and bake in the oven at 375 for about 20-25 minutes.\u00a0 (These are also delicious on pasta with a little more pesto and some chili oil on top! )\u00a0 <strong>Note:<\/strong> <em>To taste test, you can make a small flat patty and quickly fry it up to make sure the seasoning is where you want it. \u00a0Add more of anything missing before forming the meatballs.<\/em><\/p>\n<p>Bake on a wire rack in a baking sheet pan at 375 degrees for about 20-25 minutes or until done. \u00a0<em>*For making pizza, I think it&#8217;s best to slice the meatballs when they are cold, so this is a perfect leftover ingredient.<\/em><\/p>\n<p><strong>The<\/strong> <strong>Pizza:<\/strong><\/p>\n<p>Break up some fresh mozzarella and pieces of provolone and spread around the pizza.<\/p>\n<p>Spoon dollops of pesto around the pizza, as shown, so that when the cheese and pesto melt, it will all ooze together.<\/p>\n<div id=\"attachment_5634\" style=\"width: 381px\" class=\"wp-caption aligncenter\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-5634\" class=\"wp-image-5634 \" src=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2020\/04\/3Q7A6720-300x200.jpg\" alt=\"\" width=\"371\" height=\"247\" srcset=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2020\/04\/3Q7A6720-300x200.jpg 300w, https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2020\/04\/3Q7A6720-768x512.jpg 768w, https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2020\/04\/3Q7A6720-1024x682.jpg 1024w, https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2020\/04\/3Q7A6720.jpg 1280w\" sizes=\"(max-width: 371px) 100vw, 371px\" \/><p id=\"caption-attachment-5634\" class=\"wp-caption-text\">Spread a mixture of the fresh mozz and cut up provolone around the pizza leaving enough room for it all to melt together.<\/p><\/div>\n<div id=\"attachment_5635\" style=\"width: 361px\" class=\"wp-caption aligncenter\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-5635\" class=\"wp-image-5635 \" src=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2020\/04\/3Q7A6721-300x200.jpg\" alt=\"\" width=\"351\" height=\"234\" srcset=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2020\/04\/3Q7A6721-300x200.jpg 300w, https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2020\/04\/3Q7A6721-768x512.jpg 768w, https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2020\/04\/3Q7A6721-1024x682.jpg 1024w, https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2020\/04\/3Q7A6721.jpg 1280w\" sizes=\"(max-width: 351px) 100vw, 351px\" \/><p id=\"caption-attachment-5635\" class=\"wp-caption-text\">Add pesto to the dough in little spoonfuls in between where the cheese is. Add meatballs, chilis and basil.<\/p><\/div>\n<p>Add Brad\u2019s super amazing <em>Chilis<\/em> and some of the chili oil around the pizza.<\/p>\n<p>Top with basil dragged through the chili oil. First, it was a pizza! Also, I had just pulled it out of a wood fired oven and what beats a hot pizza on your plate? Right?<\/p>\n<p>But, it was more than that.<\/p>\n<p>There was warmth emanating from this pizza straight from the oven.
