What to do? What to do?!!<\/p>\n<p>One thing was for sure, I wasn&#8217;t going to make a lamb <em>merguez<\/em> sausage pizza. \u00a0Life gave me chorizo instead. \u00a0\u00a0One of the first things that comes to mind when I think of chorizo is eggs and breakfast burritos. \u00a0A pizza with runny eggs, cheese and some oily chorizo is simply delish! \u00a0But, that&#8217;s not what I was feeling.<\/p>\n<p><em>Queso Fundido!!!<\/em> \u00a0 \u00a0Now, I am feeling that!<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignright wp-image-5470 size-medium\" src=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2019\/08\/3Q7A4492-300x200.jpg\" alt=\"\" width=\"300\" height=\"200\" srcset=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2019\/08\/3Q7A4492-300x200.jpg 300w, https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2019\/08\/3Q7A4492.jpg 640w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/>I still remember the first time I had this incredible side dish of burbling cheese with oozy chorizo oil and chorizo sausage. It was served in a little black cast iron pan hot out of the oven and it blew me away.<\/p>\n<p>There\u2019s a little Mexican joint in Santa Barbara called <em>La Super-Rica<\/em> that became known not only for it\u2019s great street food, but also because Julia Child ate there often and sung it\u2019s praises. \u00a0There is always a line out the door and down the street. \u00a0When you enter the building, you order right there in front of the small open busy kitchen, which is not much bigger than if it was in a food truck.<\/p>\n<div id=\"attachment_5473\" style=\"width: 310px\" class=\"wp-caption alignleft\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-5473\" class=\"wp-image-5473 size-medium\" src=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2019\/08\/3Q7A4510-300x200.jpg\" alt=\"\" width=\"300\" height=\"200\" srcset=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2019\/08\/3Q7A4510-300x200.jpg 300w, https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2019\/08\/3Q7A4510.jpg 640w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><p id=\"caption-attachment-5473\" class=\"wp-caption-text\">Numero Uno: Just like with a queso fundido, the cheese melts all over the top of the choirzo.<\/p><\/div>\n<p>Their menu consists of small plates which lend themselves to group order and share. \u00a0No matter what we get, we order their version of <em>queso fundido<\/em>, which we enjoy in its cheesy goodness and slather on everyting. \u00a0&#8220;Fried&#8221; cheese with pork sausage is hard to beat as a combo, and just makes everything better.<\/p>\n<p>So, there\u2019s my inspiration! The Havarti added a nice buttery flavor that worked well with the spicy chorizo and milkiness of the mozzarella. \u00a0I think a nice fontina, or gouda would have worked as well.<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p><strong>\u00a0<\/strong>For the 2<sup>nd<\/sup> version, I used some of the burrata I had on hand to give this an even creamier texture. \u00a0For this one, everything went on the dough before going in the oven: \u00a0chorizo, burrata, havarti, and the chopped tomatoes. \u00a0After the bake, I added some more cool burrata cheese on top and the chopped cilantro and then drizzled some of my favorite chili oil (only because I didn&#8217;t have any more of the cooked chorizo juices). \u00a0<strong>OMG! \u00a0<\/strong>Talk about taking it up a notch! \u00a0 This was amazing! \u00a0Not only was the cheese base creamier with the burrata, but the added burrata on top gave it another one of my favorite layers of flavor, cooler temperature, and texture.<\/p>\n<div id=\"attachment_5483\" style=\"width: 310px\" class=\"wp-caption aligncenter\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-5483\" class=\"wp-image-5483 size-medium\" src=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2019\/08\/3Q7A4537-300x200.jpg\" alt=\"\" width=\"300\" height=\"200\" srcset=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2019\/08\/3Q7A4537-300x200.jpg 300w, https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2019\/08\/3Q7A4537.jpg 640w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><p id=\"caption-attachment-5483\" class=\"wp-caption-text\">Numero Dos: This was the last pizza of the night.
