{"id":517,"date":"2011-08-25T21:05:33","date_gmt":"2011-08-26T01:05:33","guid":{"rendered":"https:\/\/www.fornobravo.com\/pizzaquest\/2011\/08\/25\/pizzeria-bianco-and-big-brother\/"},"modified":"2011-08-25T21:05:33","modified_gmt":"2011-08-26T01:05:33","slug":"pizzeria-bianco-and-big-brother","status":"publish","type":"post","link":"https:\/\/www.fornobravo.com\/pizzaquest\/pizzeria-bianco-and-big-brother\/","title":{"rendered":"Pizzeria Bianco and Big Brother"},"content":{"rendered":"<p><strong>Note from Brad: Ever since reading Peter&#8217;s &#8220;American Pie:\u00a0 My Search for the Perfect Pizza&#8221; I have been trying to get myself to Phoenix, Arizona to experience what Chris Bianco is capable of doing with our favorite food &#8212; pizza!\u00a0 I have to admit, this may have become more and more of an obsession as we developed Pizza Quest.\u00a0 I will also admit that my obsession may have, just a little bit, turned toward a somewhat consistent nudging of my sister to go there on one of her many trips to Phoenix to visit her in-laws over the last few years.\u00a0 Maybe.\u00a0 Who wouldn&#8217;t slightly nudge in this case?<\/p>\n<p>The good news is that even though I haven&#8217;t made it there myself yet, my sister finally listened to me!\u00a0 You know how little sisters can be.\u00a0 I had almost forgotten my requests when one day I got a text photo of Pizzeria Bianco.\u00a0 She was there!\u00a0 When she got home, she sent me an email and some more photos from her trip and I knew we had to share her story with you.\u00a0 BTW, the photos are hers, but the captions are mine!<br \/><\/strong><\/p>\n<p><strong>Enjoy and please send us more stories of your own adventures.<\/strong><\/p>\n<p><strong><br \/><\/strong><\/p>\n<h2>Pizzeria Bianco and Big Brother<\/h2>\n<p><div id=\"attachment_513\" style=\"width: 610px\" class=\"wp-caption alignright\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-513\" class=\"caption alignright size-full wp-image-513\" src=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2011\/08\/img_1368.jpg\" border=\"0\" title=\"It's a testament of how good this place is, when you think of how hot it can be there - and they do wait!\" align=\"right\" width=\"600\" height=\"600\" srcset=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2011\/08\/img_1368.jpg 600w, https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2011\/08\/img_1368-150x150.jpg 150w, https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2011\/08\/img_1368-300x300.jpg 300w\" sizes=\"(max-width: 600px) 100vw, 600px\" \/><p id=\"caption-attachment-513\" class=\"wp-caption-text\">It&#8217;s a testament of how good this place is, when you think of how hot it can be there &#8211; and they do wait!<\/p><\/div>For at least 5 years now I have visited the in-laws in Scottsdale Arizona, each time being pressed by my beloved, pizza fanatic brother Brad, co-founder of Pizza Quest, to go to this one pizzeria. \u00a0It was an amusing process, sometimes receiving several calls from him on my vacations to see if we were thinking of going, and then to push an itinerary if I said yes.\u00a0 Don\u2019t get me wrong, I am a pizza lover and always go for a good recommend, but Bianco\u2019s was only open for dinner and the wait was two plus hours long. \u00a0So, when it came to the end of a long desert day, we always seemed to settle on local food that we could spend less time acquiring.<\/p>\n<p \/>After all of these visits to Arizona I must admit that I started to antagonize my big brother by  <!--more-->  telling him we were going to go days before I know if we really would. \u00a0All in good fun; after all, I am the little sister!\u00a0 Well, it\u2019s now year six and we almost blew it off again. We left the decision until the last minute and decided to hit it up on the way back to Los Angeles, as the place is now, at last, open for lunch and is just a mile off of the Highway 10 freeway in Phoenix. \u00a0We received a few calls and emails from the bro to press the agenda again: \u201cTake a lot of pictures&#8230; See if this and that&#8230; Try the vegetarian pistachio this&#8230; Chris&#8230; Peter&#8230; Pizza \u00a0&#8230; The Pizza &#8230;. Pizzzzzaaaaaaa!\u201d \u00a0 But yes, I do appreciate that Brad truly respects the culinary arts and was furthering my education about the history of the restaurant and it\u2019s owner Chris Bianco, his philosophy with his food, his oven and approach to his work, his \u201csoul\u2019s journey\u201d in a pizzeria.<\/p>\n<p><div id=\"attachment_514\" style=\"width: 610px\" class=\"wp-caption alignright\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-514\" class=\"caption alignright size-full wp-image-514\" src=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2011\/08\/img_1334.jpg\" border=\"0\" title=\"My sister waited years to finally go here. When she arrived with her husband, they excercised moderation?  We may not be related actually&#8230;<\/p><\/div>Pizzeria Bianco now opens at 11:30 AM for lunch, and we walked in the door at 11:45 and got the last table before a crowd quickly gathered and waited for their own pizza experience on the rustic, covered patio in 110 degree heat. Our waiter told me that, prior to opening for lunch, he had met people that had come for 5 years and never got in, so the lunch really helped this dire situation. \u00a0Now many more of us, brave enough to do an outdoor excursion in the Phoenix heat, can enjoy this culinary experience.\u00a0 My husband and I were trying to be moderate and ordered a salad and one pizza to split, but quickly realized we had better get a pizza to go as well; after all, it is a gourmetlessly long drive home through the desert and, now that we had finally \u201carrived,\u201d who knew when we\u2019d get back again. \u00a0If the fresh salad, delicious bread and olive oil were any indication of the pizza, we realized, we would wish we had ordered more. \u00a0Oh, and the yummy green olives in the salad! \u00a0Now I must also give mention to the added inspiration from the family of three sitting next to us. \u00a0When we arrived they were sitting eating one pizza. \u00a0As we sat down they ordered a second one&#8230; and soon thereafter a third. \u00a0Three people, three pizza\u2019s, all gone, no take-out. \u00a0This neighborly behavior, along with the flavors already hitting our mouths, assured us it was compulsory to order more now.<\/p>\n<p><div id=\"attachment_515\" style=\"width: 610px\" class=\"wp-caption alignright\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-515\" class=\"caption alignright size-full wp-image-515\" src=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2011\/08\/img_1318.jpg\" border=\"0\" title=\"I wasn't there yet.  But, I was that much closer as I shared a little bit of what I imagined she may be experiencing as I got her texted photos. \" align=\"right\" width=\"600\" height=\"600\" \/><p id=\"caption-attachment-515\" class=\"wp-caption-text\">I wasn&#8217;t there yet.  But, I was that much closer as I shared a little bit of what I imagined she may be experiencing as I got her texted photos.<\/p><\/div>We ordered the <em>Biancoverde<\/em> for the table: ricotta, mozzarella, Parmesan with added arugula, and olive oil and salt after cooking. \u00a0This is listed as a white pizza on the menu, but we added red sauce. This pizza made my mouth sing. \u00a0Yummy! We slowly savored one slice, eating civilized, with a fork and knife while in the restaurant, and got the rest to go for our road trip home (where I then proceeded to finish my last two <em>Verde<\/em> slices the normal barbaric way, within ten minutes on the freeway). The <em>Margherita<\/em> was our official \u201cto go\u201d companion. \u00a0This pizza was even delicious cold, as we pulled it out around Palm Springs for a late afternoon snack.<\/p>\n<p>So here is the point of the story where what I thought I knew got turned upside down. \u00a0I understood immediately that Bianco\u2019s was great; no, I knew it was excellent, but I didn\u2019t know the depth of that excellence until three weeks later when Brad and his family came to Long Beach to try my favorite local wood fired pizza joint that I had talked up for quite a while. \u00a0Do not misunderstand, I will still be eating and enjoying my local pizza, but an epiphany happened the minute this pizza hit my mouth. \u00a0I remember silently thinking, \u201cIs something different?\u201c\u00a0\u00a0 What was it?\u00a0 Something was missing.\u00a0 It was a little flat. \u00a0The \u201cextraordinary\u201d that made my mouth sing a few weeks earlier just wasn\u2019t there. \u00a0This was something very unexpected.<\/p>\n<p><div id=\"attachment_516\" style=\"width: 610px\" class=\"wp-caption alignright\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-516\" class=\"caption alignright size-full wp-image-516\" src=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2011\/08\/img_1346.jpg\" border=\"0\" title=\"I am so jealous. I feel a road trip coming on&#8230;<\/p><\/div>Over the next few days I thought about what it was, because I had never really had that experience of being a little sad when a pizza goes in my mouth? What exactly had Bianco\u2019s done to me?\u00a0\u00a0 I thought about it. \u201cMaybe it was the Parmesan bursts on that <em>Verde?<\/em> Or was it that incredible dough they make that has some sweet salty balance that makes your mouth feel confused about whether it likes sweet or savory better and convinces you to keep eating until you figure it out? \u00a0Perhaps it was the meticulous care, the love put in by the owner toward his business; the specific oven imported from Naples, or the hand picked or home grown fresh ingredients? Wait, was it the red sauce we added to the <em>Verde<\/em>?\u201d \u00a0I realized that it must be all of these elements, combined, that transforms food into art. \u00a0It has to be, I now understood, a combination of the right effort and pure love that takes something from ordinary to extraordinary.<\/p>\n<p>Brad doesn\u2019t have to talk me into going there anymore, this I know. \u00a0But I\u2019m sure he\u2019ll have some suggestions for me when I do. \u00a0And,\u00a0in the end, perhaps the most valuable lesson I have learned from six years of playing my role is, that sometimes Big Brother does know best.<\/p>\n<p>by Kristin English<\/p>\n<p>\u00a0<\/p>\n<p><strong>Ta-da!\u00a0 Thank you very much!\u00a0 <\/p>\n<p>Brad<\/strong><\/p>\n","protected":false},"excerpt":{"rendered":"<p>Note from Brad: Ever since reading Peter&#8217;s &#8220;American Pie:\u00a0 My Search for the Perfect Pizza&#8221; He has been in the business for over 24 years working on a wide range of projects that have taken him all over the country and to many parts of the globe. He loves to travel and cook for his friends and family. He discovered Peter Reinhart one day while searching the internet to find a way to make a better pizza crust and bought Peter\u2019s book: \u201cAmerican Pie, My Search for the Perfect Pizza\u201d. \u201cAs I read the opening section of the book called, \u201cThe Hunt,\u201d I knew right away that this had to be a show. I was actually jealous as I read about Peter traveling around the world going to all these amazing pizzerias and getting behind the scenes with the pizzaiolos!\u201d Within a few days he had contacted his friend, fellow producer, and fierce Competitive Restaurant Ordering rival, Jeff Michael.
