I added some beer while cooking just to add some liquid because I was trying to lead these tomatoes down Saucy Road.<\/p><\/div>\n<p>I like to alternate the sauces I&#8217;m using\u00a0to find new flavor combinations, textures, and themes for my pizzas. \u00a0I do make a lot of pizzas and I&#8217;m always looking for something new, or ways to make something different and, ultimately, &#8220;better.&#8221; \u00a0 I often\u00a0use cherry tomatoes alone on a pizza without any sauce. \u00a0I slice them in half and place them cut side down which creates little tomato bombs of flavor around the pizza. \u00a0As the pizza bakes, the tomatoes steam inside their own skin and soften and begin to ooze onto the pizza. \u00a0The liquid blends with the drizzled olive oil and even\u00a0blends\u00a0into the melting cheese. \u00a0What you end up with is a topping &#8212; a burst of tomatoes &#8212; but the liquid from the tomatoes also becomes a sauce. \u00a0It&#8217;s a nice way to use and feature beautiful fresh tomatoes.<\/p>\n<div id=\"attachment_4281\" style=\"width: 310px\" class=\"wp-caption alignright\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-4281\" class=\"wp-image-4281 size-medium\" src=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2017\/08\/IMG_4087-300x225.jpg\" alt=\"img_4087\" width=\"300\" height=\"225\" srcset=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2017\/08\/IMG_4087-300x225.jpg 300w, https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2017\/08\/IMG_4087-768x576.jpg 768w, https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2017\/08\/IMG_4087-1024x768.jpg 1024w, https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2017\/08\/IMG_4087.jpg 1280w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><p id=\"caption-attachment-4281\" class=\"wp-caption-text\">When I started making them, it looked more like I was gonna cook up my tomato salad. haha<\/p><\/div>\n<p>&nbsp;<\/p>\n<p>I picked up some freshly harvested, colorful\u00a0heirloom cherry sized tomatoes at the market. \u00a0 As I was preparing to make my pizza and slicing up the tomatoes I got the idea to\u00a0toss these into the wood fired oven to pre-roast them before putting them on the pizza. \u00a0 After placing them into a cast iron pan, I added some basil, salt, pepper and\u00a0drizzled olive oil all over them. \u00a0I could have stopped there and served it as a salad with the addition of some balsamic vinegar, but for some reason I thought about SMASHING\u00a0them after they came out of the fire.<\/p>\n<p>&nbsp;<\/p>\n<div id=\"attachment_4290\" style=\"width: 310px\" class=\"wp-caption alignleft\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-4290\" class=\"wp-image-4290 size-medium\" src=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2017\/08\/IMG_4099-300x225.jpg\" alt=\"img_4099\" width=\"300\" height=\"225\" srcset=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2017\/08\/IMG_4099-300x225.jpg 300w, https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2017\/08\/IMG_4099-768x576.jpg 768w, https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2017\/08\/IMG_4099-1024x768.jpg 1024w, https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2017\/08\/IMG_4099.jpg 1280w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><p id=\"caption-attachment-4290\" class=\"wp-caption-text\">Sort of like when I just used to place cherry tomatoes onto the dough and bake them into the pizza. This creates more sauce and more opportunity to play with the flavor profile.<\/p><\/div>\n<p>I don&#8217;t know where the idea to smash them came from, but it was one of those aha ideas where you envision the end product beforehand. \u00a0I poured more olive oil onto the tomatoes, not to coat them more, but to add to what would become the sauce. \u00a0I could see the roasted tomatoes smashed around in the pan with the tomato juices blending with the olive oil. \u00a0Really, I guess this is just a simple quick rustic tomato sauce but, in a way, the left over flesh of the tomato solids also remains as both part of the sauce and a topping ingredient. \u00a0While I was cooking my first batch of these I also poured in some beer as a way to add more liquid as I saw things coming together. \u00a0I wanted this to become\u00a0a\u00a0sauce along with being about the\u00a0roasted tomatoes. \u00a0It came out really nice.<\/p>\n<p>&nbsp;<\/p>\n<div id=\"attachment_4292\" style=\"width: 310px\" class=\"wp-caption alignright\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-4292\" class=\"wp-image-4292 size-medium\" src=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2017\/08\/IMG_4110-300x225.jpg\" alt=\"img_4110\" width=\"300\" height=\"225\" srcset=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2017\/08\/IMG_4110-300x225.jpg 300w, https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2017\/08\/IMG_4110-768x576.jpg 768w, https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2017\/08\/IMG_4110-1024x768.jpg 1024w, https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2017\/08\/IMG_4110.jpg 1280w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><p id=\"caption-attachment-4292\" class=\"wp-caption-text\">This was over the top! The tomato sauce and pesto became a couple of old friends instantly! The shrimp were done to a turn and there was just enough fresh mozz to warm your soul! Yummmmm!<\/p><\/div>\n<p>&nbsp;<\/p>\n<p>For the shrimp pizza, I\u00a0blended it with some homemade pesto, and this turned out to be nothing short of amazing! \u00a0The tomato sauce and pesto blended together and went beautifully with the shrimp pizza. \u00a0It was light and fresh and full of flavor. \u00a0I&#8217;ve also done this\u00a0on my stove top when making the sauce and pizza in my kitchen oven. \u00a0 It&#8217;s delicious and, of course, there&#8217;s no reason not to add other things to this, like roasted red peppers, or thinly sliced red onions, garlic, \u00a0or even chilis. \u00a0And, since I&#8217;m putting my thought process out there for you, I think adding some balsamic would be wonderful as well.<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<div id=\"attachment_4293\" style=\"width: 310px\" class=\"wp-caption alignleft\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-4293\" class=\"wp-image-4293 size-medium\" src=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2017\/08\/IMG_4667-300x225.jpg\" alt=\"img_4667\" width=\"300\" height=\"225\" srcset=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2017\/08\/IMG_4667-300x225.jpg 300w, https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2017\/08\/IMG_4667-768x576.jpg 768w, https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2017\/08\/IMG_4667-1024x768.jpg 1024w, https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2017\/08\/IMG_4667.jpg 1280w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><p id=\"caption-attachment-4293\" class=\"wp-caption-text\">Not just for a wood fired oven. Smashing tomatoes works on the stovetop as well!<\/p><\/div>\n<p>&nbsp;<\/p>\n<p>This is not only a really good sauce, but it&#8217;s simple and fun to create and play with. \u00a0What do you have in your kitchen right now that may enhance this? \u00a0What are you craving? \u00a0It can be sweet and savory, or spicy, or perhaps have a little tang to it. \u00a0Just as this works nicely on a pizza, it would also work well on a lightly dressed fresh pasta. \u00a0I&#8217;m just throwing this out there, but how about a little <em>Super Fantastic Smashed Tomato Sauce<\/em>, a touch of pesto, some grilled or broiled shrimp, all tossed into some nice pasta? \u00a0That&#8217;s really the pizza you see above, except as a pasta, right?
