Things are looking really good for a second year, and we should have the dates figured out within a couple of weeks so, if you&#8217;d like to be on the mailing list for the newsletter and save the date announcement write to me at <a href=\"mailto:symposium@jwu.edu\">symposium@jwu.edu<\/a> .<\/p>\n<p>So, lots of videos to watch if you&#8217;re a serious bread-head, as well as a chance to hear and see some of the great luminaries in the world of bread, such as Chad Robertson (Tartine), Glenn Roberts (Anson Mills), Nadezhda and Stefan Savova-Grigorova (who we interviewed here on Pizza Quest a few months ago about their Bakers Without Borders program), Tom Gumpel (Panera), Wolfgang Mock (the godfather of home milling), Stefan Cappelle (&#8220;The Future of Bread Lies in its Past&#8221;), Francisco Migoya (&#8220;Modernist Bread&#8221;), bread historian William Rubel (a very wild, salty, and memorable presentation), and many others.<\/p>\n<p>Meanwhile, we&#8217;ll be back next week with a new interview and an update on my upcoming fall classes.
