What I mean is that it is never the same pizza.\u00a0 It isn&#8217;t necessarily the best pizza of any particular batch of pizzas, but it is definitely one of my favorites to make. Okay, let me explain all this crypticness: When I make pizza, what I do is plan on making a couple of specific pizzas and then let at least one happen with all the left over ingredients, or whatever else I may have in the fridge &#8212; an improv pizza.\u00a0 That&#8217;s usually my favorite pizza to make.\u00a0 It&#8217;s a bit of a mix between art and performance art.\u00a0 You make something up and see if it works.\u00a0 I love this because something almost always emerges from my oven that I didn&#8217;t expect.<\/p>\n<p>In this case, what emerged during a recent pizza session were two things: sliced marinated tomatoes and the idea of combining warm and cool ingredients.\u00a0 I have been loving that concept a lot lately.\u00a0 I wasn&#8217;t necessarily thinking of it while shopping, but when I had my ingredients all there, it just jumped out at me.\u00a0 <\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"caption alignright size-full wp-image-407\" src=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2011\/08\/_mg_6084.jpg\" border=\"0\" align=\"right\" width=\"640\" height=\"427\" srcset=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2011\/08\/_mg_6084.jpg 640w, https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2011\/08\/_mg_6084-300x200.jpg 300w\" sizes=\"(max-width: 640px) 100vw, 640px\" \/>So, here&#8217;s my pizza.\u00a0 I&#8217;m calling it my Summer Caprese Pizza. It starts with some fresh ingredients, gets baked, and ends with some more fresh ingredients that are cool, summery and drizzled with tons of flavor.\u00a0 <\/p>\n<p><strong><em>Summer Caprese Pizza:<\/em><\/strong><\/p>\n<p><strong>The Pizza:<\/strong><\/p>\n<p>Peter&#8217;s Classic Dough (see Instructionals section)<br \/>Thinly sliced red onions<br \/>Thinly sliced organic leeks (or scallions)<br \/>Sliced tomatoes, marinated in Peter&#8217;s Herb Oil (see below)<br \/>Fresh Buffalo Mozzarella<br \/>Grated Grano Padano or Parmesan<strong> <\/strong><\/p>\n<p>Marinate the Sliced Tomatoes in a 1\/2 batch of Peter&#8217;s Herb Oil for the Sliced Tomatoes:<\/p>\n<p>1 Cup Olive Oil<br \/>1 Tablespoon dried basil<br \/>1 Tablespoon dried parsley<br \/>1 Tablespoon dried oregano<br \/>1\/2 Tablespoon dried rosemary needles<br \/>1\/2 Teaspoon dried thyme<br \/>1 Tablespoon granulated garlic<br \/>1\/2 Tablespoon Kosher Salt<br \/>1\/2 Teaspoon Chili Pepper Flakes (Optional)<br \/>1\/2 Teaspoon paprika (Optional)<\/p>\n<p>*See original recipe in our Instructional Section called Multipurpose Herb Oil.<\/p>\n<p><strong><div id=\"attachment_408\" style=\"width: 650px\" class=\"wp-caption alignright\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-408\" class=\"caption alignright size-full wp-image-408\" src=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2011\/08\/_mg_6175.jpg\" border=\"0\" title=\"Drizzle additional herb oil over the top.\" align=\"right\" width=\"640\" height=\"427\" srcset=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2011\/08\/_mg_6175.jpg 640w, https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2011\/08\/_mg_6175-300x200.jpg 300w\" sizes=\"(max-width: 640px) 100vw, 640px\" \/><p id=\"caption-attachment-408\" class=\"wp-caption-text\">Drizzle additional herb oil over the top.<\/p><\/div>The Pizza:<\/strong><\/p>\n<p>Build pizza by placing tomatoes on the dough.\u00a0 <br \/>Drizzle additional oil on dough over the tomatoes &#8211; I mean topping:<\/strong><\/p>\n<p>&#8211;Slice an Heirloom Tomato into wedges<br \/>&#8211;Place ball of Buffalo Mozzarella over the tomato and break it open <br \/>&#8211;Tear fresh basil leaves into strips, or cut them and lay over the top<br \/>&#8211;Drizzle Olive oil and Balsamic Vinegar over salad<br \/>&#8211;Sprinkle a little sea or kosher salt and fresh ground pepper to finish<\/p>\n<p>*Great as a side salad, appetizer, or in this case a pizza topping!<\/p>\n<p>\u00a0<\/p>\n<p><strong><div id=\"attachment_409\" style=\"width: 650px\" class=\"wp-caption alignright\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-409\" class=\"caption alignright size-full wp-image-409\" src=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2011\/08\/_mg_6200.jpg\" border=\"0\" title=\"There is some really nice color and flavor balance in this pizza.\" align=\"right\" width=\"640\" height=\"427\" srcset=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2011\/08\/_mg_6200.jpg 640w, https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2011\/08\/_mg_6200-300x200.jpg 300w\" sizes=\"(max-width: 640px) 100vw, 640px\" \/><p id=\"caption-attachment-409\" class=\"wp-caption-text\">There is some really nice color and flavor balance in this pizza.<\/p><\/div>Finishing the pizza:<\/strong><\/p>\n<p>Remove the baked pizza from the oven when it&#8217;s done.<br \/>Notice the charred onion tips and even the edges of the tomato.\u00a0 But, the thicker slices of tomato still hold up and are really moist.<br \/>Grate some Grano Padano Cheese over the top<\/p>\n<p>Cut and dig in.\u00a0 <strong>No, wait!<\/strong><\/p>\n<p>\u00a0<\/p>\n<\/p>\n<p>\u00a0<\/p>\n<p><div id=\"attachment_410\" style=\"width: 650px\" class=\"wp-caption alignright\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-410\" class=\"caption alignright size-full wp-image-410\" src=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2011\/08\/_mg_6216.jpg\" border=\"0\" title=\"You bite through the warm crust, tomatoes and cheese from the bottom and the cool caprese salad dripping with the balsamic from the top!\" align=\"right\" width=\"640\" height=\"427\" srcset=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2011\/08\/_mg_6216.jpg 640w, https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2011\/08\/_mg_6216-300x200.jpg 300w\" sizes=\"(max-width: 640px) 100vw, 640px\" \/><p id=\"caption-attachment-410\" class=\"wp-caption-text\">You bite through the warm crust, tomatoes and cheese from the bottom and the cool caprese salad dripping with the balsamic from the top!<\/p><\/div><strong> <\/strong><\/p>\n<p><strong>Add the final topping:<\/strong><\/p>\n<p>Here&#8217;s where my cold and hot obsession has been leading.\u00a0 I then add some of the Caprese salad to top off this pizza.\u00a0 The addition of the cool cheese with basil and balsamic vinegar make this not only a great pizza to create, but a great pizza to eat!\u00a0 This is, IMHO, the perfect summer pizza!\u00a0 Its fresh and simple ingredients scream for the back yard patio and a nice cold beer, or cool glass of wine.<\/p>\n<p>When I made this the first time it really came together as a live-performance-work-of-art.\u00a0 I honestly didn&#8217;t plan this and it&#8217;s something that just came together in the moment, a flash. He discovered Peter Reinhart one day while searching the internet to find a way to make a better pizza crust and bought Peter\u2019s book: \u201cAmerican Pie, My Search for the Perfect Pizza\u201d. \u201cAs I read the opening section of the book called, \u201cThe Hunt,\u201d I knew right away that this had to be a show. I was actually jealous as I read about Peter traveling around the world going to all these amazing pizzerias and getting behind the scenes with the pizzaiolos!\u201d Within a few days he had contacted his friend, fellow producer, and fierce Competitive Restaurant Ordering rival, Jeff Michael.
