It\u2019s really quite simple and like anything, you can add and subtract and come up with your own version quite easily, which is really what cooking and enjoying food is all about &#8212; at least for me.<\/p>\n<p>I want to give credit for the pesto recipe that inspired me. The recipe can be found at <em>101 Cookbooks.com<\/em> and is called <em>\u201cHow to Make Pesto like an Italian Grandmother Recipe\u201d<\/em> <a href=\"http:\/\/www.101cookbooks.com\/archives\/001570.html\">*LINK<\/a>. \u00a0I didn\u2019t measure my ingredients out; rather, I did my best to channel my inner-most Italian <em>Nonna<\/em>! (I&#8217;m actually of Irish\/German stock but, hey, just having fun here&#8230;.). What I liked about this recipe was it focused on chopping everything by hand. \u00a0This creates a more irregular\u00a0texture than if you just tossed things in a blender and made a uniform paste.<\/p>\n<p>Pesto ideas came flooding in. The first and best one\u00a0was a light and summery pesto and shrimp pizza.<\/p>\n<div id=\"attachment_4041\" style=\"width: 387px\" class=\"wp-caption alignright\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-4041\" class=\"wp-image-4041 \" src=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2017\/05\/IMG_4087-300x225.jpg\" alt=\"img_4087\" width=\"377\" height=\"283\" srcset=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2017\/05\/IMG_4087-300x225.jpg 300w, https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2017\/05\/IMG_4087-768x576.jpg 768w, https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2017\/05\/IMG_4087-1024x768.jpg 1024w\" sizes=\"(max-width: 377px) 100vw, 377px\" \/><p id=\"caption-attachment-4041\" class=\"wp-caption-text\">A nice assortment of cherry tomatoes, this topping\/sauce starts out looking like it&#8217;s about to be a great salad!<\/p><\/div>\n<p>I think something special happened on my way to making this pizza. \u00a0As I was thinking about what to add, I thought I\u2019d throw on some sliced cherry tomatoes for a nice sweet flavor pop. \u00a0I then said the following words to myself: \u201cSmashed Fire Roasted Tomatoes.\u201d\u00a0 There it was!\u00a0 The idea was laid out in 4 simple words, but I saw in my mind&#8217;s eye the whole process, from cutting the tomatoes to laying them out on the pizza. \u00a0The smashing would make the tomatoes not only a topping, but also a sauce!<\/p>\n<p>And so it evolved: fresh pesto, smashed fire roasted tomatoes, shrimp, and a little fresh mozzarella, with red chili flakes and a splash of vinegar to finish it off and we have a seriously good pizza folks!<\/p>\n<p>Let&#8217;s go&#8230;.<\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<p>&#8211; Pizza Dough <a href=\"https:\/\/www.fornobravo.com\/pizzaquest\/recipe-neapolitan-pizza-dough\/\">*Link<\/a><br \/>\n&#8211; Cherry Tomatoes &#8211; \u201cSmashed Fire Roasted Tomatoes\u201d *Recipe below<br \/>\n&#8211; Fresh Pesto *Recipe below<br \/>\n&#8211; Shrimp<br \/>\n&#8211; Fresh Mozzarella<br \/>\n&#8211; Chili Flakes<br \/>\n&#8211; Touch of Vinegar to finish<\/p>\n<div id=\"attachment_4018\" style=\"width: 369px\" class=\"wp-caption alignright\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-4018\" class=\"wp-image-4018 \" src=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2017\/05\/IMG_4069-300x225.jpg\" alt=\"img_4069\" width=\"359\" height=\"269\" srcset=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2017\/05\/IMG_4069-300x225.jpg 300w, https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2017\/05\/IMG_4069-768x576.jpg 768w, https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2017\/05\/IMG_4069-1024x768.jpg 1024w\" sizes=\"(max-width: 359px) 100vw, 359px\" \/><p id=\"caption-attachment-4018\" class=\"wp-caption-text\">Hand chopped&#8230;<\/p><\/div>\n<p><strong>Fresh Pesto:<\/strong><\/p>\n<p>&#8211; Large handful\/bunch of fresh basil leaves<br \/>\n&#8211; Small handful of pine nuts<br \/>\n&#8211; 3 cloves of garlic<br \/>\n&#8211; Small handful of freshly grated Parmesan<br \/>\n&#8211; Olive oil<\/p>\n<p>Follow link above for a more detailed description of the method of preparation, but here\u2019s the essence:<\/p>\n<p>&nbsp;<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-4020 alignleft\" src=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2017\/05\/IMG_4071-300x225.jpg\" alt=\"img_4071\" width=\"300\" height=\"225\" srcset=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2017\/05\/IMG_4071-300x225.jpg 300w, https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2017\/05\/IMG_4071-768x576.jpg 768w, https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2017\/05\/IMG_4071-1024x768.jpg 1024w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/>&#8211;Take a large bunch of basil leaves (a full handful) and chop half of it.<br \/>\n&#8211;Rough chop 3 cloves of garlic and then chop with the 1st half of your basil.<br \/>\n&#8211;Add more basil and some Parmesan and chop.<br \/>\n&#8211;Add half of the pine nuts and continue chopping.<br \/>\n&#8211;Add more basil, more pine nuts and if needed more Parmesan.<\/p>\n<p>What you are doing here is building layers of the ingredients &#8212; some of it chopped into smoothness, and other parts added later are chopped less, and so on. \u00a0This builds a pesto with more textures, which also affects the flavor because each bite is different than the one before it.<\/p>\n<p>Once done, squeeze it into a tight puck and put in a small bowl (as close in size to the puck as you have) and pour some olive oil over it &#8212; just enough to coat it. \u00a0Later, stir it up to use. So good. So fun. So easy!<\/p>\n<p>*I didn\u2019t add any salt, but you could add a little if you think it needs it.<\/p>\n<div id=\"attachment_4045\" style=\"width: 357px\" class=\"wp-caption alignright\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-4045\" class=\"wp-image-4045 \" src=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2017\/05\/IMG_4093-300x225.jpg\" alt=\"&quot;My goal is to make entire meals in the wood fire.&quot;\" width=\"347\" height=\"260\" srcset=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2017\/05\/IMG_4093-300x225.jpg 300w, https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2017\/05\/IMG_4093-768x576.jpg 768w, https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2017\/05\/IMG_4093-1024x768.jpg 1024w\" sizes=\"(max-width: 347px) 100vw, 347px\" \/><p id=\"caption-attachment-4045\" class=\"wp-caption-text\">After roasting a while the tomatoes are soft and it is becoming a sauce.<\/p><\/div>\n<p><strong>\u201cSmashed Fire Roasted Tomatoes\u201d<\/strong><\/p>\n<p>Okay, this was a flash invention. It may have existed out there, but I just re-invented this on the fly and I think\u00a0you will \u00a0love it. It\u2019s a really fun way to do tomato sauce differently.<\/p>\n<p>&#8211; Cherry Tomatoes<br \/>\n&#8211; Fresh Basil<br \/>\n&#8211; Olive Oil<br \/>\n&#8211; Salt and Pepper<br \/>\n&#8211; Beer<\/p>\n<p>&nbsp;<\/p>\n<div id=\"attachment_4025\" style=\"width: 345px\" class=\"wp-caption alignright\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-4025\" class=\"wp-image-4025 \" src=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2017\/05\/IMG_4099-300x225.jpg\" alt=\"img_4099\" width=\"335\" height=\"251\" srcset=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2017\/05\/IMG_4099-300x225.jpg 300w, https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2017\/05\/IMG_4099-768x576.jpg 768w, https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2017\/05\/IMG_4099-1024x768.jpg 1024w\" sizes=\"(max-width: 335px) 100vw, 335px\" \/><p id=\"caption-attachment-4025\" class=\"wp-caption-text\">Spoon the tomatoes and sauce and spread onto the pizza.<\/p><\/div>\n<p>The idea is simple. Use as many tomatoes as you want to make the sauce\/topping. \u00a0Slice most in half\u00a0and leave some whole. You could cut them all, or leave them all whole because they will ultimately be \u201csmashed\u201d as the title states.<\/p>\n<p>&#8211;Tomatoes into the cast iron pan.<br \/>\n&#8211;Tear up some basil leaves<br \/>\n&#8211;Add some Salt, Pepper and Olive Oil<\/p>\n<p>*Hey, At this point, you could stop and have it as a salad with a little balsamic vinegar!<\/p>\n<p>&#8211;Into the wood fired oven as it\u2019s heating up. Give it time to char and soften the tomatoes.<\/p>\n<p>&#8211;When soft, smash them in the pan with a large spoon or tongs etc. Now it\u2019s no longer just a bunch of tomatoes &#8212; it\u2019s both a sauce and tomatoes. \u00a0*I cooked it some more after smashing to make sure it was oozy and saucy and blended. \u00a0Standing there in front of my oven I felt inspired to add some beer into the pan to more add liquid.<\/p>\n<p>&#8211;Set it aside when done to use as a topping\/sauce on your pizzas. *Note: Pull the skins off the tomatoes, if you like, after it cools a bit before placing on the pizza.<\/p>\n<div id=\"attachment_4023\" style=\"width: 370px\" class=\"wp-caption alignleft\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-4023\" class=\"wp-image-4023 \" src=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2017\/05\/IMG_4097-300x225.jpg\" alt=\"img_4097\" width=\"360\" height=\"270\" srcset=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2017\/05\/IMG_4097-300x225.jpg 300w, https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2017\/05\/IMG_4097-768x576.jpg 768w, https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2017\/05\/IMG_4097-1024x768.jpg 1024w\" sizes=\"(max-width: 360px) 100vw, 360px\" \/><p id=\"caption-attachment-4023\" class=\"wp-caption-text\">Don&#8217;t these look good?!<\/p><\/div>\n<p><strong>The Shrimp:<\/strong><\/p>\n<p>When I was done with the tomatoes I poured them into a bowl. I used the same pan to toss in my shrimps! I added some more olive oil, salt, pepper and lemon juice and lemon rind.<\/p>\n<p>Into the oven until just barely almost done. This is an amazing sauce and if you fired this up as it is right now, it would be a great pizza!<\/p><\/div>\n<p><strong>THE PIZZA!!!!!!<\/strong><\/p>\n<p>&#8212; Spread the dough.<br \/>\n&#8212; Add some of the tomatoes and sauce and spread around<br \/>\n&#8211;Add some of the fresh pesto<br \/>\n&#8212; Add some fresh mozzarella (Not too much for this pizza &#8211; just enough!)<br \/>\n&#8211;Cut the shrimp in half lengthwise so they are not so big on the pizza and place them<br \/>\non top.<br \/>\n&#8212; Finish with some red chili flakes and a sprinkle of vinegar<\/p>\n<p>&nbsp;<\/p>\n<p><strong>I<\/strong><strong>nto the oven&#8230;.<\/strong><\/p>\n<div id=\"attachment_4029\" style=\"width: 367px\" class=\"wp-caption alignleft\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-4029\" class=\"wp-image-4029 \" src=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2017\/05\/IMG_4103-300x225.jpg\" alt=\"img_4103\" width=\"357\" height=\"268\" srcset=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2017\/05\/IMG_4103-300x225.jpg 300w, https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2017\/05\/IMG_4103-768x576.jpg 768w, https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2017\/05\/IMG_4103-1024x768.jpg 1024w\" sizes=\"(max-width: 357px) 100vw, 357px\" \/><p id=\"caption-attachment-4029\" class=\"wp-caption-text\">Plenty of shrimp and just enough mozzarella. As always, there are options, you could go without the cheese on this one easily.<\/p><\/div>\n<p>This pizza was amazing! I am craving it even now as I write this post. First of all, my dough was supple, puffy, chewy, crisp, and delicious! My wife said instantly that this was the best dough I\u2019ve made in a while. \u00a0Funny, I agreed right away. \u00a0It was the one I\u00a0am questing for until I somehow produce the next &#8220;ONE&#8221;. \u00a0How can something as simple as dough be so hard to perfect and repeat?!!! \u00a0Anyway, as it turns out I struck gold on this one.<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<div id=\"attachment_4035\" style=\"width: 466px\" class=\"wp-caption alignright\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-4035\" class=\"wp-image-4035 \" src=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2017\/05\/IMG_4112-300x225.jpg\" alt=\"img_4112\" width=\"456\" height=\"342\" srcset=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2017\/05\/IMG_4112-300x225.jpg 300w, https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2017\/05\/IMG_4112-768x576.jpg 768w, https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2017\/05\/IMG_4112-1024x768.jpg 1024w\" sizes=\"(max-width: 456px) 100vw, 456px\" \/><p id=\"caption-attachment-4035\" class=\"wp-caption-text\">Finish with a little vinegar and the chili flakes (or a nice chili oil). Lovely!<\/p><\/div>\n<p>The toppings were fresh and summery\u00a0and blended together like old friends. There was a general warmth to this pizza &#8212; the kind of warmth I think we\u2019re looking for when we want comfort food. Warm bread, beautiful fresh ingredients and nourishment! \u00a0What more can you ask for? \u00a0Well, there is one more thing\u2026the true warmth came through as I sat there with my wife and shared this pizza together. \u00a0Food can be great, but when you add the ingredient of great people\u00a0that&#8217;s what makes it an experience.<\/p>\n<p>I set the expectation pretty high on this one.
