In this next series of webisodes we’re going to spend time with legendary winemaker, Dan Karlsen<\/strong>, of Talbott Vineyards<\/em>. For those who are just now joining us, the most recent segments and all those to follow were filmed at Talbott<\/em> during the Forno Bravo Wood-Fired Oven Expo<\/em><\/strong>. We filmed for three days, capturing cooking demonstrations, one on one interviews, and interaction with hundreds of attendees who shared a passion for both food and fire — and also wine, as it turned out.<\/p>\n Talbott, as you will learn, is famous for just two types of wines, Chardonnay and Pinot Noir. There are obvious reasons for this, since these are the two grapes that grow best in the Salinas\/Monterey valley In this segment, Dan will explain how he does to grapes what I try to do with wheat: to evoke the full potential of flavor trapped in the grain (or, in his case, the grape). What I loved about Dan is that his philosophy of wine making is simple: do as little as possible, get out of the way of nature, and don’t screw up the grapes.<\/em> You’ll see what I mean in this and in the upcoming segments.
