but not spicy because of the wine he was pairing it with.<\/p>\n<p>I was having some friends over and, because of the spices, I decided to open a different wine to use to make this pizza, as well as to drink with them &#8211; a 2008 Dover Canyon Barbarian from the Central Coast.\u00a0 We had recently taken a family trip to Cambria, CA with our friends, the Dunhams, and they were coming over for dinner.\u00a0 Kevin and Kristin are good friends with the owner of Dover Canyon, Dan Panico.\u00a0 We were lucky enough to be able to tag along for a barbecue at the winery on one of the nights while we were up there.\u00a0 <\/p>\n<p><div id=\"attachment_342\" style=\"width: 650px\" class=\"wp-caption alignright\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-342\" class=\"caption alignright size-full wp-image-342\" src=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2011\/06\/_mg_5220.jpg\" border=\"0\" title=\"Sauteed Mushies in a wine reduction with left over sausage bits and spices...\" align=\"right\" width=\"640\" height=\"427\" srcset=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2011\/06\/_mg_5220.jpg 640w, https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2011\/06\/_mg_5220-300x200.jpg 300w\" sizes=\"(max-width: 640px) 100vw, 640px\" \/><p id=\"caption-attachment-342\" class=\"wp-caption-text\">Sauteed Mushies in a wine reduction with left over sausage bits and spices&#8230;<\/p><\/div>What a great time!\u00a0 A number of people I know who have houses in Cambria had told me to visit Dover Canyon and were jealous when I told them we were not only going wine tasting, but also going over for a barbecue.\u00a0 I&#8217;ve had their wines on numerous occasions while sitting by the Dunham&#8217;s pool snacking on cheeses and salted pork products.\u00a0 You don&#8217;t often get go to a private barbecue at a winery, and almost never as a family guest, kids and all.\u00a0 So, I thought it was a good idea to follow up and make this pizza with one of the delicious wines we bought that weekend.\u00a0 <\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"caption alignright size-full wp-image-343\" src=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2011\/06\/img_3663.jpg\" border=\"0\" align=\"right\" width=\"426\" height=\"640\" srcset=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2011\/06\/img_3663.jpg 426w, https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2011\/06\/img_3663-200x300.jpg 200w\" sizes=\"(max-width: 426px) 100vw, 426px\" \/>Dan and his fiance&#8217; Glenda were gracious hosts at the winery.\u00a0 When we showed up a little late, after getting out of LA traffic that Friday, we were immediately given glasses of wine and began to get acquainted.\u00a0 The guys moved upstairs, above the tasting room for some pool, while the women did &#8211; something else.\u00a0 Who knows?!\u00a0 And, at the time, who cares!\u00a0 They were busy, happy, and the kids were off running around outside, and we were drinking great wine with the winemaker and playing pool.\u00a0 How do you beat that?<\/p>\n<p>A little while later, we moved over to the house to start grilling.\u00a0 The dinner consisted of some marinated lamb, mashed potatoes with root vegetables mixed in, grilled avocados stuffed with shrimp and mango salsa, a fresh farmers market salad, some great fresh bread, and lots of delicious wine.\u00a0 We sat out on the covered back patio with a soft rain coming down and enjoyed a memorable candlelit meal.\u00a0 <\/p>\n<p>And we even came back the next day to do some &#8220;official&#8221; wine tasting. \u00a0<\/p>\n<p>Dover Canyon is a small winery that sits on top of a beautiful rolling hilltop.\u00a0 Dan and Glenda live in the older farm style house that overlooks it all.\u00a0 If you ever visit the tasting room, you will surely be greeted by the big, gigantic, lovable &#8220;puppy&#8221; Saint Bernard named THUNDER!   <!--more-->  The logo is not actually of Thunder, but he is surely the official mascot now!<\/p>\n<p><div id=\"attachment_344\" style=\"width: 650px\" class=\"wp-caption alignright\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-344\" class=\"caption alignright size-full wp-image-344\" src=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2011\/06\/img_3677.jpg\" border=\"0\" title=\"Katy, Dara, Dash, Owen and Thunder!\" align=\"right\" width=\"640\" height=\"426\" srcset=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2011\/06\/img_3677.jpg 640w, https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2011\/06\/img_3677-300x200.jpg 300w\" sizes=\"(max-width: 640px) 100vw, 640px\" \/><p id=\"caption-attachment-344\" class=\"wp-caption-text\">Katy, Dara, Dash, Owen and Thunder!<\/p><\/div>The kids (Owen and Dara English, Dash and Katy Dunham) had a ball running around the vineyard with Thunder.\u00a0 It was raining most of the weekend, which gave them all a chance to get out and be real kids sloshing through the mud, wandering around the vineyard, walking through the swelling creek and generally doing exactly what they can&#8217;t do here at home in Redondo Beach, CA.\u00a0 <\/p>\n<p>So, that&#8217;s how I got the wine but now, back home, making pizza, this one was created originally by Jay Buonchristiani, at his family&#8217;s winery in Napa. It may be wrong of me to introduce a version of his pizza so soon with another wine but, without the lamb sausage, I wanted to save my final bottle of Jay&#8217;s Syrah. \u00a0I feel like his pizza was created as a celebration of gathering and, since we did gather, and we did enjoy good company, I think the following pizza is an appropriate extension of Jay&#8217;s original recipe.\u00a0 I thank him again.\u00a0 And, I thank Dan Panico and Glenda for sharing their time and winery with us that weekend. <\/p>\n<p>Now, to bring it all full circle, here is the pizza we then shared with the Dunhams after returning from our Dover Canyon winery adventure, inspired by my love of Jay Bunchristiani&#8217;s original version!\u00a0 <\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"caption alignright size-full wp-image-345\" src=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2011\/06\/_mg_5311.jpg\" border=\"0\" align=\"right\" width=\"640\" height=\"427\" srcset=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2011\/06\/_mg_5311.jpg 640w, https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2011\/06\/_mg_5311-300x200.jpg 300w\" sizes=\"(max-width: 640px) 100vw, 640px\" \/><\/p>\n<p>The Versatile Buonchristiani based Spicy Pork and Mushroom Pizza Recipe:<\/p>\n<p>Peter&#8217;s Classic Neoplitan Dough<br \/>Italian Fontina, Provolone Cheese (3 oz per pizza total)<br \/>Teleme Cheese, or other soft creamy mild cheese, like Brie (about 1 oz)<br \/>Spicy Pork Sausage &#8211; removed from the casing<br \/>Brown Button Mushrooms, or any fresh variety, such as Shitake <br \/>2 Garlic Cloves<br \/>Tarragon<br \/>Thyme<br \/>Nutmeg *I omitted this for this spicy pork version<br \/>Pepper \u00a0all spices and herbs to tast<br \/>Sea Salt to taste<br \/>Extra Virgin Olive Oil, as needed<\/p>\n<p>Remove the sausage from the casing (unless you bought a bulk sausage) and saute with a little garlic and olive oil. \u00a0Make sure not to fully cook the sausage, as it will continue to cook in the oven.
