\u00a0Actually, everything Kelly made for us was off the charts amazing.\u00a0 <\/p>\n<p>I made the bruschetta topping a few hours early so the flavors would become more and more blended as it sat, waiting for it&#8217;s supporting role.\u00a0 As I was making the topping I realized I was looking at the basic ingredients of a Margherita Pizza (tomato, fresh basil &#8211; cheese to follow).\u00a0 I decided that this would be my &#8220;left-overs pizza.&#8221; \u00a0I don&#8217;t know why, but I thought of it as an&#8221;Upside Down&#8221; Margherita.\u00a0 I admit there is nothing upside down about it, but it&#8217;s my title and I&#8217;m sticking with it.\u00a0 It&#8217;s memorable.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"caption size-full wp-image-308\" src=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2011\/05\/_mg_5266.jpg\" border=\"0\" width=\"640\" height=\"427\" srcset=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2011\/05\/_mg_5266.jpg 640w, https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2011\/05\/_mg_5266-300x200.jpg 300w\" sizes=\"(max-width: 640px) 100vw, 640px\" \/>&#8220;Upside Down&#8221; Margherita Pizza Recipe:<\/p>\n<p><span style=\"text-decoration: underline;\">Fresh Bruschetta Topping:<\/span><br \/>three \u00a0or four chopped plum or garden tomatoes<br \/>chopped fresh basil, about 10 to 12 leaves<br \/>a little chopped fresh garlic, maybe 2 to 3 cloves<br \/>1 tablespoon of olive oil<br \/>salt and pepper, to taste<\/p>\n<p>I made it in advance, again to let the flavors come together.\u00a0 I&#8217;m sure you could play with this simple recipe and add all sorts of flavors &#8211; like a balsamic vinegar that would give it another layer of flavor.\u00a0 <\/p>\n<p><span style=\"text-decoration: underline;\">&#8220;Upside Down&#8221; Margherita Pizza:<\/span> <br \/> I used Peter&#8217;s Country Dough for this one (see the Instructional Section on this site).\u00a0 <br \/>fresh bruschetta topping\u00a0<br \/>fresh mozzarella, about 2 or 3 ounces per pizza<\/p>\n<p> The Oven&#8211;heated as high as it will go, with a pizza stone.<\/p>\n<p>Extra olive oil for drizzling when it&#8217;s done<br \/> *I also added a little more basil after cooking.<\/p>\n<p>Enjoy!<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"caption alignright size-full wp-image-309\" src=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2011\/05\/_mg_5247.jpg\" border=\"0\" align=\"right\" width=\"427\" height=\"640\" srcset=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2011\/05\/_mg_5247.jpg 427w, https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2011\/05\/_mg_5247-200x300.jpg 200w\" sizes=\"(max-width: 427px) 100vw, 427px\" \/>*The chef&#8217;s assistant pictured here is a beer from the artisan brewery called &#8220;The Bruery&#8221; The beer is called <em>Saison Rue; <\/em>Kelly Whitaker introduced it to me when we filmed with him back in October.\u00a0 Kelly served it with a <em>Sous Vide <\/em>cooked<em> <\/em>Beef Short Rib that he finished in the wood burning oven to give it a more firm, slightly charred, crispy crust &#8212; wow!
