Here are a couple for consideration:<\/p>\n<p>Our friend, Daniel Young, the author of the must have, <strong><em>&#8220;Where to Eat Pizza,&#8221; <\/em><\/strong>just sent out a note with the following message:<\/p>\n<div class=\"definition-parent\">\n<div class=\"paragraph\">\n<div>\n<div>\n<div><em>When it comes to declaring\u00a0which pizza rises above them all\u00a0there is strength in numbers.<\/em><\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<div class=\"definition-parent\">\n<div class=\"paragraph\">\n<div>\n<div>\n<div><em>I may be the author of <a class=\"validating\" href=\"http:\/\/clicks.aweber.com\/y\/ct\/?l=9W4Tk&amp;m=3Y99vb869tqGtvw&amp;b=4FPpElagqI1cUWr7YLTmbA\" target=\"_blank\">WHERE TO EAT PIZZA<\/a>, but I didn&#8217;t try, much less choose, all of its 1,705 featured pizzerias. The selections in <a href=\"http:\/\/clicks.aweber.com\/y\/ct\/?l=9W4Tk&amp;m=3Y99vb869tqGtvw&amp;b=lJfGMyhq0Vr6SU.tUyy0VA\" target=\"_blank\">the Experts&#8217; Guide to the Best Pizza Places in the World<\/a> were nominated\u00a0by 1,077 knowledgeable pizza informants in 48 countries.<\/em><\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<div class=\"definition-parent\">\n<table class=\"floated-right\" width=\"\" align=\"right\">\n<tbody>\n<tr>\n<td><em><a class=\"aw-image-link\" href=\"http:\/\/clicks.aweber.com\/y\/ct\/?l=9W4Tk&amp;m=3Y99vb869tqGtvw&amp;b=4FPpElagqI1cUWr7YLTmbA\" target=\"_blank\"> <img loading=\"lazy\" decoding=\"async\" class=\"model\" src=\"https:\/\/hostedimages-cdn.aweber-static.com\/NTgyNDk5\/original\/9841475268e54e718fcdb8aa84df706a.jpeg\" alt=\"Image\" width=\"300\" height=\"300\" align=\"right\" border=\"0\" \/> <\/a><\/em><\/td>\n<\/tr>\n<\/tbody>\n<\/table>\n<\/div>\n<div class=\"definition-parent\">\n<div class=\"paragraph\">\n<div>\n<div>\n<div><em>Likewise, I did not decide which of the five participating UK pizza makers\u00a0at\u00a0the <a class=\"validating\" href=\"http:\/\/clicks.aweber.com\/y\/ct\/?l=9W4Tk&amp;m=3Y99vb869tqGtvw&amp;b=pQprT.wRE.85uQ7xtH0CzQ\" target=\"_blank\">2016 London Pizza Festival<\/a> presented the\u00a0best signature pizza. To me they\u00a0were all winners.<\/em><\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<div class=\"definition-parent\">\n<div class=\"paragraph\">\n<div>\n<div><em>The winner of the London Pizza Festival Cup\u00a0was chosen by <a class=\"validating\" href=\"http:\/\/clicks.aweber.com\/y\/ct\/?l=9W4Tk&amp;m=3Y99vb869tqGtvw&amp;b=U0fPqiD0MZwc8TxOPTqAVA\" target=\"_blank\">700 pizza-loving Londoners<\/a> who were asked to\u00a0try all five pizzas and vote for their favorite.<\/em><\/div>\n<\/div>\n<\/div>\n<\/div>\n<div class=\"definition-parent\">\n<div class=\"paragraph\">\n<div>\n<div>\n<div><em>Democracy does have its limits. No number of experts knows your preferences as well as you do. Ultimately the best pizza in the world is either\u00a0the one YOU like the most\u00a0or the one that just happens to be in your hands, oozing molten mozzarella onto your fingertips and hot juices\u00a0down your wrist,\u00a0when the question is\u00a0asked.<\/em><\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<div class=\"definition-parent\">\n<div class=\"paragraph\">\n<div>\n<div>\n<div><em>Best,<\/em><\/div>\n<div><em>Daniel<\/em><\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<p>Thanks Daniel (who, while he lives in London, is actually a native New Yorker, heart and soul)!\u00a0 To see a video of the London festival, check out Daniel&#8217;s website and take a look at his book at this link or any of those underlined above.<\/p>\n<p><strong><a href=\"http:\/\/www.youngandfoodish.com\/where-to-eat-pizza\/\" target=\"_blank\">http:\/\/www.youngandfoodish.com\/where-to-eat-pizza\/<\/a>\u00a0\u00a0\u00a0 <\/strong>(BTW, I love the name of his site, youngandfoodish.com &#8212; clever little play on words there, my friend!!)<strong><br \/>\n<\/strong><\/p>\n<p>Daniel has agreed to let me interview him, which I will do ASAP, and will publish it right here in my <em>Peter&#8217;s Blog<\/em> section as soon as we get it done. But, needless to say, this is one book that any people who consider themselves pizza mavens should certainly have.<\/p>\n<p>&nbsp;<\/p>\n<p>On another subject, I received an email from a bread enthusiast in Israel named Samuel (Hebrew name, Betzalel) Messenger. He sent me the following photo of an amazing wedding Challah that he made. Inspiring (and how did he do it?)!!!<a href=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2016\/07\/download.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignleft wp-image-3101\" src=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2016\/07\/download-300x225.jpg\" alt=\"Wedding Challah, a masterpiece!\" width=\"633\" height=\"475\" srcset=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2016\/07\/download-300x225.jpg 300w, https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2016\/07\/download.jpg 640w\" sizes=\"(max-width: 633px) 100vw, 633px\" \/><\/a><\/p>\n<p>But, he also told me that he now has been thinking about making gluten free breads and thought that there might be an enzyme that could make it taste as a good as regular wheat flour breads. He also wondered if there might be an enzyme that could turn any bread into a &#8220;butter-tasting&#8221; bread &#8212; that is, that could make a loaf taste like it had already been slathered with butter.\u00a0 Interesting idea, I thought, since I have long been thinking about the power of enzymes to affect flavor. After all, it&#8217;s the diastatic enzymes in malt that accelerate the release of natural sugars trapped in wheat and other grains &#8212; a process not only important for bread and pizza dough but also for beer and spirit beverages. And, yes, there are enzymes for just about any purpose, so I think Samuel\/Betzalel is onto something here. He&#8217;s interested in pursuing these ideas and even trying to patent some of them. I&#8217;d love to see some of you run with this ball. He believes that the specific enzymes already exist and that he knows how to track them down.
