{"id":287,"date":"2011-04-19T05:17:11","date_gmt":"2011-04-19T09:17:11","guid":{"rendered":"https:\/\/www.fornobravo.com\/pizzaquest\/2011\/04\/19\/a-barbeque-gas-grill-and-pizza-oven\/"},"modified":"2011-04-19T05:17:11","modified_gmt":"2011-04-19T09:17:11","slug":"a-barbeque-gas-grill-and-pizza-oven","status":"publish","type":"post","link":"https:\/\/www.fornobravo.com\/pizzaquest\/a-barbeque-gas-grill-and-pizza-oven\/","title":{"rendered":"A Wood-Fired Gas Grill"},"content":{"rendered":"<p \/>This is Part II of my recipe pictorial of Jay Buonchristiani&#8217;s Lamb with Fennel Sausage and Mushroom Pizza recipe.\u00a0 <\/p>\n<p><div id=\"attachment_280\" style=\"width: 650px\" class=\"wp-caption alignright\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-280\" class=\"caption alignright size-full wp-image-280\" src=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2011\/04\/_mg_4526.jpg\" border=\"0\" title=\"1st Pizza done on the grill...\" align=\"right\" width=\"640\" height=\"427\" srcset=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2011\/04\/_mg_4526.jpg 640w, https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2011\/04\/_mg_4526-300x200.jpg 300w\" sizes=\"(max-width: 640px) 100vw, 640px\" \/><p id=\"caption-attachment-280\" class=\"wp-caption-text\">1st Pizza done on the grill&#8230;<\/p><\/div>You saw the making of the the first pizza in the original pictorial.\u00a0 I continued on, making 2 more pizzas since you can never just make one pizza anyway, right?!\u00a0 But, the reason I split this pictorial up was because I sort of stumbled on something interesting.\u00a0 I have had great results with the Forno Bravo pizza stone in my convection oven (which I posted about previously).\u00a0 I also use a second stone on the top shelf, which helps retain the heat from above and can even be used to cook a second pizza as you alternate between stones, because the pizzas actually suck the heat out of them as you place a cold one in.\u00a0 I usually tend to cook my pizzas between 8-10 minutes in the oven.\u00a0 I&#8217;m very happy with this set up and have gotten great results that continue to get better.\u00a0 Even still, it is nothing like the pizzas coming out of a super hot wood fired oven, as we all know.\u00a0 <\/p>\n<p>I was thinking about the earthiness of this pizza recipe &#8211; covered in lamb sausage with added garlic and fresh fennel and sauteed mushrooms, or <em>Mushies<\/em>, as Jay calls them.\u00a0 I also thought I would try this on Peter&#8217;s Country Dough, which I thought would really go well with the cheesey\/earthiness of this recipe.  <!--more-->  And then, I finally decided I would make one or two of the pies on my grill &#8211; which seemed at least a little more rustic.<\/p>\n<p><div id=\"attachment_281\" style=\"width: 650px\" class=\"wp-caption alignright\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-281\" class=\"caption alignright size-full wp-image-281\" src=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2011\/04\/_mg_4561.jpg\" border=\"0\" title=\"5 Burners, Pizza Stone on Baking Pan, Wood-Box\" align=\"right\" width=\"640\" height=\"427\" srcset=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2011\/04\/_mg_4561.jpg 640w, https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2011\/04\/_mg_4561-300x200.jpg 300w\" sizes=\"(max-width: 640px) 100vw, 640px\" \/><p id=\"caption-attachment-281\" class=\"wp-caption-text\">5 Burners, Pizza Stone on Baking Pan, Wood-Box<\/p><\/div>While I was pre-heating the inside oven, I turned on my grill.\u00a0 I placed a pizza stone on an inverted baking pan covered in foil to protect the pan.\u00a0 I have read on the FB Forum that a pizza stone placed straight on a grill would likely crack.\u00a0 So this was just a precaution.\u00a0 As I was turning on the grill I noticed my iron wood-smoker box sitting on the side of the grill.\u00a0 A light bulb went off (I have to confess, it wasn&#8217;t a green one, I&#8217;m still thinking in incandescent brainstorms): <em>&#8220;Why not use the box and see if I can bring some smoke into the picture here&#8221;.<\/em> I&#8217;ll do this when cooking up certain things like a Santa Maria Tri-Tip and it works beautifully.<\/p>\n<p><div id=\"attachment_282\" style=\"width: 650px\" class=\"wp-caption alignright\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-282\" class=\"caption alignright size-full wp-image-282\" src=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2011\/04\/_mg_4509.jpg\" border=\"0\" title=\"Wood Box on Fire!\" align=\"right\" width=\"640\" height=\"427\" srcset=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2011\/04\/_mg_4509.jpg 640w, https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2011\/04\/_mg_4509-300x200.jpg 300w\" sizes=\"(max-width: 640px) 100vw, 640px\" \/><p id=\"caption-attachment-282\" class=\"wp-caption-text\">Wood Box on Fire!<\/p><\/div>I let the grill heat up for a long time to get the stone up to temperature while I was making the indoors pizza and taking photos along the way.\u00a0 When I came outside, the grill was raging.\u00a0 I had put some wood in the box, but not turned on the burner that it sat on, yet the wood had been consumed.\u00a0 So, I put in some fresh chunks of apple wood, which is what I had around for use in my smoker.\u00a0 They soon took to smoking and then flaming.<\/p>\n<p>I cooked this next pizza.<\/p>\n<p><div id=\"attachment_283\" style=\"width: 650px\" class=\"wp-caption alignright\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-283\" class=\"caption alignright size-full wp-image-283\" src=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2011\/04\/_mg_4515.jpg\" border=\"0\" title=\"I had to spin the pizza - notice the char on the left\" align=\"right\" width=\"640\" height=\"427\" srcset=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2011\/04\/_mg_4515.jpg 640w, https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2011\/04\/_mg_4515-300x200.jpg 300w\" sizes=\"(max-width: 640px) 100vw, 640px\" \/><p id=\"caption-attachment-283\" class=\"wp-caption-text\">I had to spin the pizza &#8211; notice the char on the left<\/p><\/div>It seemed to go pretty quickly and you can see it got some serious char on it compared with the oven.\u00a0 Check out the steam coming off the pie in the picture above on the right.<\/p>\n<p>I cooked the 3rd pie with the leftover ingredients.\u00a0 I timed this pizza and it was just under 6 minutes.\u00a0 The grill was hot!\u00a0 The temperature gauge was off the chart.\u00a0 I don&#8217;t know how hot it got, but the white ceramic coals built into the grill turned green by the end of all this.\u00a0 Does Green Heat come after Red Hea?\u00a0 Can I take credit for this new discovery?<\/p>\n<p><div id=\"attachment_284\" style=\"width: 650px\" class=\"wp-caption alignright\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-284\" class=\"caption alignright size-full wp-image-284\" src=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2011\/04\/_mg_4512.jpg\" border=\"0\" title=\"High Heat, Wood-Fire, Smoke\" align=\"right\" width=\"640\" height=\"427\" \/><p id=\"caption-attachment-284\" class=\"wp-caption-text\">High Heat, Wood-Fire, Smoke<\/p><\/div>This was a really fun addition to my pizza making process.\u00a0 It is definitely something I will be playing with in the near future.\u00a0 I was able to put the pizza together with more elements that I think enhanced the flavor and certainly the fun and experience.\u00a0 I can&#8217;t wait to get a real wood fired oven, but this definitely brought some of the benefits of those ovens within my grasp.<\/p>\n<p>Wood<\/p>\n<p>Fire<\/p>\n<p>High Heat<\/p>\n<p>Baking Stone Surface<\/p>\n<div id=\"attachment_285\" style=\"width: 650px\" class=\"wp-caption alignright\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-285\" class=\"caption alignright size-full wp-image-285\" src=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2011\/04\/_mg_4534.jpg\" border=\"0\" title=\"Wood Fired Pizza?!\" align=\"right\" width=\"640\" height=\"427\" srcset=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2011\/04\/_mg_4534.jpg 640w, https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2011\/04\/_mg_4534-300x200.jpg 300w\" sizes=\"(max-width: 640px) 100vw, 640px\" \/><p id=\"caption-attachment-285\" class=\"wp-caption-text\">Wood Fired Pizza?!<\/p><\/div>\n<p>\u00a0<\/p>\n<p>Again, I want to thank Jay Buonchristiani for the delicious Lamb with Fennel Sausage and Mushroom Pizza recipe.\u00a0 This one moved right up to the top of my list.\u00a0 My wife and daughter, who don&#8217;t even like lamb, loved it!\u00a0 I do have to admit though, when my daughter asked what was on the pizza and the words, &#8220;lamb sausage and mushrooms&#8221; He has been in the business for over 24 years working on a wide range of projects that have taken him all over the country and to many parts of the globe. He loves to travel and cook for his friends and family. He discovered Peter Reinhart one day while searching the internet to find a way to make a better pizza crust and bought Peter\u2019s book: \u201cAmerican Pie, My Search for the Perfect Pizza\u201d. \u201cAs I read the opening section of the book called, \u201cThe Hunt,\u201d I knew right away that this had to be a show. I was actually jealous as I read about Peter traveling around the world going to all these amazing pizzerias and getting behind the scenes with the pizzaiolos!\u201d Within a few days he had contacted his friend, fellow producer, and fierce Competitive Restaurant Ordering rival, Jeff Michael.
