A week after I made the best dough I think I\u2019ve ever created the next batch falls terribly short. \u00a0The topping ingredients are the easy part. \u00a0There are true artisans, craftspeople, artists out there who have perfected their products. \u00a0I can buy a truly inspiring salumi, fresh artisan mozzarella, local farmers market herbs and vegetables, the best tomatoes etc.People like Rob DiNapoli and Chris Bianco are out there focusing on producing amazing tomato products. \u00a0But the one aspect we have to perfect at home, all by ourselves, is the dough!<\/span><\/p>\n<p><span style=\"line-height: 1.4em;\">Pizza isn\u2019t easy for that reason. \u00a0The dough is a living, breathing entity. \u00a0If you haven\u2019t seen it, watch this presentation Peter Reinhart gave on TED about the life of bread. *<\/span><a style=\"line-height: 1.4em;\" title=\"Peter Reinhart: The art and craft of bread\" href=\"https:\/\/www.ted.com\/talks\/peter_reinhart_on_bread?language=en\" target=\"_self\">LINK<\/a><span style=\"line-height: 1.4em;\"> It\u2019s really fascinating. \u00a0Pizza dough is the same. \u00a0It\u2019s an ever changing, evolving thing that starts as dry ingredients, is transformed into a wet dough ball that grows as the yeast and sugars in the flour interact, and then is cooked and dried again in the oven creating a pizza. \u00a0That\u2019s a difficult process to get right &#8211; especially with consistency.<img loading=\"lazy\" decoding=\"async\" class=\" alignright size-full wp-image-1445\" title=\"shaped dough\" src=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2015\/05\/vpn shaped dough.jpg\" alt=\"shaped dough\" width=\"1280\" height=\"853\" align=\"right\" border=\"0\" srcset=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2015\/05\/vpn%20shaped%20dough.jpg 1280w, https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2015\/05\/vpn%20shaped%20dough-300x200.jpg 300w, https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2015\/05\/vpn%20shaped%20dough-1024x682.jpg 1024w\" sizes=\"(max-width: 1280px) 100vw, 1280px\" \/> <\/span><\/p>\n<p><span style=\"line-height: 1.4em;\">Then try working in a Wood Fired Oven! \u00a0That adds a whole lot of variables, but what I love about it is that you can\u2019t just dial in an exact temperature or place your pizza, salmon, veggies, steak, or pork roast into the oven and walk away while a digital timer ticks down to \u201cDONE\u201d! \u00a0 You can\u2019t even repeat what you did the last time you cooked. \u00a0Each fire is different. \u00a0Each day is different. \u00a0Each time you go into your wood fired oven it\u2019s a dance between you, your food and the wild elements at work. To me, that\u2019s brilliant. \u00a0I never follow a recipe to the letter. Instead, I like to use most recipes as a guide. Making pizza in a wood fired oven is the same. \u00a0Success requires your past experiences and current senses to guide you and that is so much fun and the pay off is awesome.<\/span><\/p>\n<p><span style=\"line-height: 1.4em;\"><strong>Pizza is always a dance to be sure.<\/strong> Even when cooking in my home oven, where the temperature can be set to an exact temperature and I\u2019ve rigged my oven with 2 pizza stones and a baking steel to help regulate the heat distribution, I still have to dance the jingo-jango to coax the best pizza out of the oven!<img loading=\"lazy\" normally would just post a recipe about each pizza I made, but, for now, let me just say that I came close to pure pizza joy and perfection &#8212; and close is pretty pretty
