Keep them coming Bob! \u00a0Don&#8217;t stop when you&#8217;ve run out of things to say about your Tomato Pies &#8212; let&#8217;s see about getting you into some cheese making next! \u00a0Or, perhaps let us in on some of your other wood burning oven activities out there on your farm. \u00a0I can smell the wood smoke coming from your chimney now.<\/span><\/p>\n<p>Bob has taken things to another level. \u00a0He is the type of true artisan we&#8217;re all so lucky exists! He takes that unprecedented time and focus that it takes to move things beyond good and into the category of being great, or perhaps insane. \u00a0Of course, I use the term &#8220;insane&#8221; more as a form of praise for his drive rather than one to declare his true levels of sanity. I cut them up in large pieces.<\/p><\/div>\n<p><span style=\"font-size: 11px; line-height: 1.4em;\">My brother was just out for the weekend, and he hadn&#8217;t ever had one of the pizzas from my new Primavera 60 Wood-Fired baby\u2026I mean oven! We had plans to go out to dinner his last night here, but he kept looking at the oven sitting on the patio and asking questions about it or, as it turns out, hinting questions that would lead to the obvious change of our plans. \u00a0When I clued in, the plans changed. \u00a0I &#8220;decided&#8221; to make a couple of pizzas for him that night. \u00a0With Bob&#8217;s stories running through my head, I thought I would play ball\u2026take the plunge and pull a few of my own attempts at the Tomato Pie game.<\/span><\/p>\n<p>&nbsp;<\/p>\n<div id=\"attachment_1395\" style=\"width: 650px\" class=\"wp-caption alignright\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-1395\" class=\"caption alignright size-full wp-image-1395\" title=\"Looks like a tomato pie!\" src=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2014\/05\/_mg_9570.jpg\" alt=\"\" width=\"640\" height=\"427\" align=\"right\" border=\"0\" srcset=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2014\/05\/_mg_9570.jpg 640w, https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2014\/05\/_mg_9570-300x200.jpg 300w\" sizes=\"(max-width: 640px) 100vw, 640px\" \/><p id=\"caption-attachment-1395\" class=\"wp-caption-text\">Looks like a tomato pie!<\/p><\/div>\n<p><span style=\"font-size: 11px; line-height: 1.4em;\">I didn&#8217;t do it by the &#8220;book&#8221;, but the results were so good I will definitely continue to bring this pie into the line up when I make pizzas. \u00a0In a way, this could be the starting point for any pizza night. It&#8217;s the simplest ingredients that often come together to define a dish. \u00a0For pizza the basics are: great dough, great tomatoes, great cheese and a few other ingredients as you wish.<\/span><\/p>\n<p>&nbsp;<\/p>\n<p><strong>A Couple Tomato Pies:<\/strong><\/p>\n<p>&#8211; Peter&#8217;s Neo-Neopolitan Dough<\/p>\n<p>&#8211; Canned San Marzano peeled tomatoes\u00a0 (*I had a #10 can of the Bianco Dinapoli Peeled California Plum Tomatoes!)<\/p>\n<p>&#8211; Mozzarella<\/p>\n<p>&#8211; Basil<\/p>\n<p>&#8211; Olive Oil<\/p>\n<p>&#8211; Salt and Pepper to taste<\/p>\n<p>&#8211; Chili Oil\u00a0 (Just assume this is around if I ever forget it in a recipe. \u00a0It&#8217;s really not part of the\u00a0<span style=\"line-height: 1.4em;\">recipe, but at the same time, it is part of THE Recipe!)<\/span><\/p>\n<div id=\"attachment_1396\" style=\"width: 650px\" class=\"wp-caption alignright\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-1396\" class=\"caption alignright size-full wp-image-1396\" title=\"The next pie got doubled up on the layers!\" src=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2014\/05\/_mg_9579.jpg\" alt=\"\" width=\"640\" height=\"427\" align=\"right\" border=\"0\" srcset=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2014\/05\/_mg_9579.jpg 640w, https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2014\/05\/_mg_9579-300x200.jpg 300w\" sizes=\"(max-width: 640px) 100vw, 640px\" \/><p id=\"caption-attachment-1396\" class=\"wp-caption-text\">The next pie got doubled up on the layers!<\/p><\/div>\n<p><span style=\"font-size: 11px; line-height: 1.4em;\">So, I opened my Bianco Dinapoli can &#8211; after refrigerating it because Bob tells us that&#8217;s what he&#8217;s found works best for him. \u00a0Hello tomatoes! \u00a0I have to confess, sitting over the counter and sink as I cut the tomatoes I started drooling. \u00a0This was a lucky circumstance because the object of my desire was right there in front of me. \u00a0I picked up one of these &#8220;plums&#8221; and leaned over the sink, tilted my head and dropped the fruit\/vegetable into my mouth like a servant feeding Ceasar. \u00a0I took most of it in my mouth and bit holding the top of the tomato. \u00a0It oozed a little out of my mouth &#8212; since I was over the sink and I was feeling a little decadent I let it drip down my chin as I savored the tomato. Holy Moley &#8212;\u00a0 so simply good it was amazing!<\/span><\/p>\n<p>Back to cutting the tomatoes after I digressed for a taste. \u00a0Ok, I digressed two more times as I made the pizzas. \u00a0What? \u00a0It was a #10 can! \u00a0There were a lot of tomatoes.<\/p>\n<p>&nbsp;<\/p>\n<div id=\"attachment_1397\" style=\"width: 650px\" class=\"wp-caption alignright\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-1397\" class=\"caption alignright size-full wp-image-1397\" title=\"This pizza has two cooked layers of tomatoes and cheese. You could also add a cool layer of tomatoes to the hot pizza&#8230;<\/p><\/div>\n<p><strong>The Tomato Pies:<\/strong><\/p>\n<p><span style=\"font-size: 11px; line-height: 1.4em;\">You&#8217;ll see two versions of my Tomato Pies in the photos. \u00a0The first was the basic: \u00a0Dough &#8211; Tomatoes &#8211; Cheese &#8211; Basil &#8211; Oven. \u00a0It was great! \u00a0As I went to make the next one I thought I could use a few more tomatoes. \u00a0I varied my construction: Dough &#8211; Cheese &#8211; Tomatoes &#8211; Cheese &#8211; Tomatoes &#8211; Basil. \u00a0A double double as it turns out is good for a pizza as it is for a fast food hamburger. \u00a0Come on! \u00a0You know those are good! \u00a0How about Animal Style? \u00a0The secret menu at my house is developing.<\/span><\/p>\n<p><span style=\"font-size: 11px; line-height: 1.4em;\">These were amazing pies. \u00a0Peter&#8217;s Neo-Neopolitan Dough is always a great performer. \u00a0It&#8217;s always light and puffy and allows the ingredients to shine. \u00a0They shined! \u00a0I&#8217;m sure I&#8217;m way off the mark of where Bob is when pulling pies out of his oven, but I&#8217;m here to tell you to jump on board Bob&#8217;s Tomato Pie Express. \u00a0Delicious!<\/span><\/p>\n<p>I&#8217;ll be playing with this for awhile.<\/p>\n<p>&nbsp;<\/p>\n<p>Enjoy the photos&#8230;<\/p>\n<p>Tomato Pie #1:<\/p>\n<p>&nbsp;<\/p>\n<p>Tomato Pie #2 &#8211; The Double Tomato Pie:<\/p>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>I have been drooling and laughing and hoping to meet Bob Radcliffe some day as we&#8217;ve been posting and reading the wonderful articles about his Tomato Pie journey here on Pizza Quest.
