It finished cooking under foil as I prepared to make the pizza.<\/p><\/div>If I want that perfect piece of fish I will take out my Weber Smokey Mountain Bullet and use it as a base for setting up a fire over lump charcoal and then add in some wood chips before laying the fish on the grill. \u00a0I just think a gas grill can&#8217;t get you there. \u00a0The open fire, the coals, the smoking wood just bring something more basic, or raw to the cooking experience. \u00a0To me, this is something I notice more with fish than with meat or chicken. \u00a0I think fish is simply more delicate than our other favorite proteins. \u00a0The timing has to be just right to get it off the grill so it can ease itself to the finish line on the plate. \u00a0The flavors are more subtle also, which is perhaps why I notice the wood and smoke flavors so much more. \u00a0A perfectly cooked piece of fish is about balance.<\/p>\n<p>I didn&#8217;t have time to do this one on the Weber though. \u00a0So, as a substitute I used my gas grill and accompanied it with a lot of wood chips in my smoke box. \u00a0This baby was thick. \u00a0I wasn&#8217;t timing it, but I was nervously watching it because I was going to take this piece of fish and use some of it on a pizza. \u00a0I definitely didn&#8217;t want it to go past that critical moment, and I actually wanted to pull it off the grill before that moment to make sure it was moist.<\/p>\n<p><div id=\"attachment_1259\" style=\"width: 650px\" class=\"wp-caption alignright\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-1259\" class=\"caption alignright size-full wp-image-1259\" src=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2013\/08\/_mg_1913-1.jpg\" border=\"0\" title=\"I began to flake the flesh apart to place on the pizza. It&#8217;s perfectly done &#8211; almost just slightly under fully cooked.<\/p><\/div>I usually test my fish by pressing on the thickest part with a finger to sense the resistance. \u00a0It&#8217;s a guessing game, but you can get a good sense of when it&#8217;s done this way with practice.<\/p>\n<p>I laid this thick, beautiful piece of fish down and closed the lid. \u00a0I did some more prep for what seemed like moments. \u00a0I was nervous about this thing for some reason. \u00a0I felt an urge to get out and turn it. \u00a0But, I waited. \u00a0I cut up some tomatoes. \u00a0&#8220;You should let it sit there. Wait for it,&#8221; I kept saying to myself. \u00a0I looked at the tomatoes and decided how many I would slice before I went back to check. \u00a0Finally! \u00a0I opened the lid and turned the fish. \u00a0It was looking good! So, I put the lid back down to keep the smoke rolling around.<\/p>\n<p>After a few more minutes, I did my finger test and decided that this piece of fish was done. \u00a0It was time to rest it on the plate, covered in foil, as it finished cooking.<\/p>\n<p>\u00a0<\/p>\n<h3>Grilled Smoked Yellowtail Pizza with Fresh Cherry Tomatoes and Ricotta<\/h3>\n<p>A &#8220;Brew in Germania&#8221; Pizza Dough &#8211; or any favorite dough!<\/p>\n<p>Olive Oil<\/p>\n<p>Halved Cherry Tomatoes<\/p>\n<p>Ricotta Cheese<\/p>\n<p>Torn Basil<\/p>\n<p>Lemon Garlic Aioli Sauce *See below<\/p>\n<p>\u00a0<\/p>\n<p><strong><img loading=\"lazy\" decoding=\"async\" class=\"caption alignright size-full wp-image-1260\" src=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2013\/08\/_mg_1911-1.jpg\" border=\"0\" align=\"right\" width=\"640\" height=\"427\" srcset=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2013\/08\/_mg_1911-1.jpg 640w, https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2013\/08\/_mg_1911-1-300x200.jpg 300w\" sizes=\"(max-width: 640px) 100vw, 640px\" \/>Prep:<\/strong><\/p>\n<p><em>The Yellowtail:<\/em><\/p>\n<p>Grill it (see above) and set it aside. \u00a0This can even be cooled when you put it on the pizza after the pizza has baked.<\/p>\n<p>\u00a0<\/p>\n<p><em>The Lemon Garlic Aioli:<\/em><\/p>\n<p>I found an aioli recipe that looked good. \u00a0There are tons of them online. \u00a0Here is a link to the one I used from About.com Culinary Arts: *Link but you can use your favorite version Make this beforehand and it can sit in the fridge.<\/p>\n<p><span style=\"white-space: pre;\"> <\/span><\/p>\n<p><strong><div id=\"attachment_1261\" style=\"width: 650px\" class=\"wp-caption alignright\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-1261\" class=\"caption alignright size-full wp-image-1261\" src=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2013\/08\/_mg_1899.jpg\" border=\"0\" title=\"Grill set up with Pizza Steel on bottom, fire brick on the side, Forno Bravo Thick Pizza Stone on top and fire box in back.\" align=\"right\" width=\"640\" height=\"427\" srcset=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2013\/08\/_mg_1899.jpg 640w, https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2013\/08\/_mg_1899-300x200.jpg 300w\" sizes=\"(max-width: 640px) 100vw, 640px\" \/><p id=\"caption-attachment-1261\" class=\"wp-caption-text\">Grill set up with Pizza Steel on bottom, fire brick on the side, Forno Bravo Thick Pizza Stone on top and fire box in back.<\/p><\/div>Assemble:<\/strong><\/p>\n<p>Spread your dough<\/p>\n<p>Drizzle with Olive Oil.<\/p>\n<p>Place pinches of the ricotta cheese around the dough. \u00a0Follow with enough tomatoes to make sure you balance their function as a sauce and topping. When you do bite into them, you get that explosion of flavor. \u00a0*See photos and then feel free to ignore what I just wrote and add as many as you want! \u00a0I try to place as many as I can cut side down, because they steam and really hold in the moisture in the oven and are extra juicy when you bite into them.<\/p>\n<p>Add the torn up, or chopped basil leaves.<\/p>\n<p><div id=\"attachment_1262\" style=\"width: 650px\" class=\"wp-caption alignright\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-1262\" class=\"caption alignright size-full wp-image-1262\" src=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2013\/08\/_mg_1923-1.jpg\" border=\"0\" title=\"I have to wonder why I didn't take the picture facing the fire?!\" align=\"right\" width=\"640\" height=\"427\" srcset=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2013\/08\/_mg_1923-1.jpg 640w, https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2013\/08\/_mg_1923-1-300x200.jpg 300w\" sizes=\"(max-width: 640px) 100vw, 640px\" \/><p id=\"caption-attachment-1262\" class=\"wp-caption-text\">I have to wonder why I didn&#8217;t take the picture facing the fire?!<\/p><\/div>I was firing this pizza on my grill also. \u00a0I used the Baking Steel as the base and my Forno Bravo Stone elevated above it as a refractory element to help hold the heat in when I opened the grill lid. \u00a0I also set a fresh fire box of wood chips ablaze to add some real fire and smoke to the cooking set up.<\/p>\n<p>Into the pizza grill it went.<\/p>\n<p>I had to pull this out quickly because the steel bottom was so hot, it would have burnt the bottom. \u00a0So, the dough didn&#8217;t quite get the rise I was hoping for.<\/p>\n<p>\u00a0<\/p>\n<p><strong><div id=\"attachment_1263\" style=\"width: 650px\" class=\"wp-caption alignright\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-1263\" class=\"caption alignright size-full wp-image-1263\" src=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2013\/08\/_mg_1919-1.jpg\" border=\"0\" title=\"The warm yellowtail topped with the Lemon Garlic Aioli to finish this off.\" align=\"right\" width=\"640\" height=\"427\" srcset=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2013\/08\/_mg_1919-1.jpg 640w, https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2013\/08\/_mg_1919-1-300x200.jpg 300w\" sizes=\"(max-width: 640px) 100vw, 640px\" \/><p id=\"caption-attachment-1263\" class=\"wp-caption-text\">The warm yellowtail topped with the Lemon Garlic Aioli to finish this off.<\/p><\/div>The Finishing Touches:<\/strong><\/p>\n<p>Pull off flakes of the yellowtail and spread around the pizza. \u00a0Drip the aioli on top. \u00a0In a sense, this pizza is upside down. \u00a0The sauce is on top!<\/p>\n<p>Stop the presses! \u00a0OMG! \u00a0TPII!!! \u00a0Owen! \u00a0Get over here and try this. \u00a0In fact, it was so good, I wanted to make another. \u00a0The dough was a little too burnt on the bottom. \u00a0So, I wanted to give it another shot. \u00a0I started the next on the top deck, the FB Baking Stone, and then moved it down to the steel to finish. \u00a0This helped the crust situation and confirmed that <em><strong>This Pizza Is Insane (TPII)!!!<\/strong><\/em> I hope you were wondering what the heck that meant. \u00a0If not, I feel sorry for you, but I&#8217;m impressed at the same time.<\/p>\n<p><div id=\"attachment_1264\" style=\"width: 650px\" class=\"wp-caption alignright\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-1264\" class=\"caption alignright size-full wp-image-1264\" src=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2013\/08\/_mg_1916-1.jpg\" border=\"0\" title=\"My grill didn't do this justice!  The heat was out of whack, but the taste was all there.
