{"id":1089,"date":"2012-10-20T05:59:11","date_gmt":"2012-10-20T09:59:11","guid":{"rendered":"https:\/\/www.fornobravo.com\/pizzaquest\/2012\/10\/20\/di-fara-pizza\/"},"modified":"2012-10-20T05:59:11","modified_gmt":"2012-10-20T09:59:11","slug":"di-fara-pizza","status":"publish","type":"post","link":"https:\/\/www.fornobravo.com\/pizzaquest\/di-fara-pizza\/","title":{"rendered":"Di Fara Pizza"},"content":{"rendered":"<p><strong>Di Fara Pizza &#8211; Part I of a 3 stop pizza quest:<\/strong><\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"caption alignright size-full wp-image-1083\" src=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2012\/10\/p1010382.jpg\" border=\"0\" align=\"right\" width=\"640\" height=\"360\" srcset=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2012\/10\/p1010382.jpg 640w, https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2012\/10\/p1010382-300x169.jpg 300w\" sizes=\"(max-width: 640px) 100vw, 640px\" \/>Dave Wilson (our very own Pizza Quest Director of Photography and Co-Director on our various webisodes) and I were working in New York together and realized that it looked like we were going to actually have a Saturday afternoon off. \u00a0Time for ourselves! \u00a0The wheels were spinning. \u00a0What to do? \u00a0Where to go? \u00a0NY is limitless after all! \u00a0With this much time off we quickly came up with a small &#8220;p&#8221; pizza quest to keep ourselves busy and fed.<\/p>\n<p>Our first stop was Di Fara. \u00a0We had heard so much about it, but neither of us had ever been. \u00a0We figured we would go try some pizza there and make our way over to Roberta&#8217;s while still in Brooklyn and then come back to the city and end our quest at Keste &#8212; because Dave had never been there either and I insisted that he would have to try it.<\/p>\n<p>Armed with iPhones and subway apps we hit the rails. \u00a0Our destination was in an out of the way place in Brooklyn. \u00a0We didn&#8217;t know how &#8220;out of the way&#8221; it was until later when we were trying to find a cab to take us &#8220;up&#8221; to Roberta&#8217;s. \u00a0The road trip was happening. \u00a0Too bad, we thought, that Peter, Jeff and the rest of the crew and equipment weren&#8217;t all piling into the subway car with us.<\/p>\n<p>\u00a0<\/p>\n<p>Brooklyn, here we come!<\/p>\n<div id=\"attachment_1084\" style=\"width: 650px\" class=\"wp-caption alignright\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-1084\" class=\"caption alignright size-full wp-image-1084\" src=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2012\/10\/di fara sign.jpg\" border=\"0\" title=\"What do you see here, but time gone by?\" align=\"right\" width=\"640\" height=\"640\" srcset=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2012\/10\/di%20fara%20sign.jpg 640w, https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2012\/10\/di%20fara%20sign-150x150.jpg 150w, https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2012\/10\/di%20fara%20sign-300x300.jpg 300w\" sizes=\"(max-width: 640px) 100vw, 640px\" \/><p id=\"caption-attachment-1084\" class=\"wp-caption-text\">What do you see here, but time gone by?<\/p><\/div>\n<p>The stop at Avenue J is only steps from Di Fara&#8217;s. \u00a0You notice right away that this area is different. It&#8217;s more run down, or less developed depending on how you look at it. \u00a0Not knowing the area, you have to wonder if it&#8217;s safe. \u00a0Since we were on a quest, we knew it was safe. \u00a0Nothing happens to you when you are actually on a quest, right?!\u00a0 (Well, miracles happen, but nothing bad.)<\/p>\n<p>There was something else different about this stop, these streets, and this pizza place. \u00a0The Di Fara Pizza sign is original to say the least. \u00a0It&#8217;s a classic to be sure. The street and the pizzeria seem suspended in time. \u00a0This place is the same pizzeria you would have visited 5 years ago, 10 years ago, 15, 20 etc.<\/p>\n<p>\u00a0<\/p>\n<p>\u00a0<\/p>\n<p><div id=\"attachment_1085\" style=\"width: 650px\" class=\"wp-caption alignright\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-1085\" class=\"caption alignright size-full wp-image-1085\" src=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2012\/10\/image 13.jpg\" border=\"0\" title=\"When you visit, I can almost guarantee you can take this same picture on any given day...\" align=\"right\" width=\"640\" height=\"640\" srcset=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2012\/10\/image%2013.jpg 640w, https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2012\/10\/image%2013-150x150.jpg 150w, https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2012\/10\/image%2013-300x300.jpg 300w\" sizes=\"(max-width: 640px) 100vw, 640px\" \/><p id=\"caption-attachment-1085\" class=\"wp-caption-text\">When you visit, I can almost guarantee you can take this same picture on any given day&#8230;<\/p><\/div>As we walked up to the pizzeria, we could see Dom DeMarco through\u00a0what may have been an old ordering window open onto the street. \u00a0We snapped this picture on one of our iPhones. \u00a0The funny thing is that there is a artist rendering inside that is of Dom in almost the same position as we found him &#8211; how old was that? \u00a0How old is this place? \u00a0How much time has Dom stood there, making pizza after pizza over the years?<\/p>\n<p>The place wasn&#8217;t as crowded as I expected. \u00a0We were there a little after the lunch rush around 1:30Pm I think. \u00a0There was one guy taking orders and Mr. DeMarco was making pizza. \u00a0I think there was another kid in the back kitchen, but didn&#8217;t see him. \u00a0We placed our order for the classic Regular Pie with Fresh Basil. \u00a0The guy said it would be about an hour. \u00a0Really? \u00a0There were not that many people around. \u00a0Ok?! \u00a0We&#8217;ll wait.<\/p>\n<p>\u00a0<\/p>\n<p>\u00a0<\/p>\n<p><div id=\"attachment_1086\" style=\"width: 650px\" class=\"wp-caption alignright\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-1086\" class=\"caption alignright size-full wp-image-1086\" src=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2012\/10\/p1010434.jpg\" border=\"0\" title=\"Dom is making his pizza.\" align=\"right\" width=\"640\" height=\"360\" srcset=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2012\/10\/p1010434.jpg 640w, https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2012\/10\/p1010434-300x169.jpg 300w\" sizes=\"(max-width: 640px) 100vw, 640px\" \/><p id=\"caption-attachment-1086\" class=\"wp-caption-text\">Dom is making his pizza.<\/p><\/div>I couldn&#8217;t wait. \u00a0It all smelled so good. \u00a0An hour? \u00a0I found a way to let go and embrace the experience. \u00a0I decided to visit this place in this warp of arrested time and allow it to unfold around me.<\/p>\n<p>Mr. DeMarco made a pizza. \u00a0We watched. \u00a0We walked outside again and watched through the window. We took a few more pictures of the sign. \u00a0Time passed quickly, but not because it seemed like all of a sudden our pizza was ready, but because time acted differently. \u00a0I&#8217;ll admit that our quest may well have been the main reason we seemed to pass our time so effortlessly, but it was something I not only noticed, but felt.<\/p>\n<p><div id=\"attachment_1087\" style=\"width: 650px\" class=\"wp-caption alignright\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-1087\" class=\"caption alignright size-full wp-image-1087\" src=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2012\/10\/dom 2.jpg\" border=\"0\" title=\"Mr. DeMarco makes another pie.\" align=\"right\" width=\"640\" height=\"640\" srcset=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2012\/10\/dom%202.jpg 640w, https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2012\/10\/dom%202-150x150.jpg 150w, https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2012\/10\/dom%202-300x300.jpg 300w\" sizes=\"(max-width: 640px) 100vw, 640px\" \/><p id=\"caption-attachment-1087\" class=\"wp-caption-text\">Mr. DeMarco makes another pie.<\/p><\/div>We wanted to get a table to experience the place instead of eating our pizza on the street. \u00a0There are only about 6 tables, so after our hour or so, we waited inside and got some sodas and sat down. \u00a0I think we waited almost 2 hours for our pizza in the end. \u00a0Mr. DeMarco made pizza after pizza after pizza by himself. \u00a0He wasn&#8217;t rushed, and wasn&#8217;t necessarily taking his time either. \u00a0He was making each pizza with as much time as each pizza needed to be made with &#8211; as if time was actually one of the ingredients. \u00a0I have never seen this before and didn&#8217;t really think about that until just now as I am writing this blog post. \u00a0That&#8217;s an interesting concept.<\/p>\n<p>Our waiting time was up. \u00a0Mr. DeMarco held the basil over our pie and snipped away at it with his shears. \u00a0I broke the time space continuum here, and moved quickly through this stalled timeless place and snapped a photo of my pizza. \u00a0It was still Mr. DeMarco&#8217;s pizza though, as it hadn&#8217;t been passed off yet, but Dave and I were soon to become it&#8217;s new owners.<\/p>\n<p>Dave and I were dying to speak to Mr. DeMarco. \u00a0I knew that Peter has met him before and I could have easily said hello. \u00a0Instead we wanted to visit this place and experience it for what it was. \u00a0I&#8217;m glad we did. \u00a0I have often thought about watching Mr. DeMarco make his pizzas. \u00a0It&#8217;s almost surreal. He gave each pizza his undivided attention. \u00a0Would he have done so if we told him we would likely be posting pictures and writing an article?\u00a0 Based on everything we saw, it probably wouldn&#8217;t have phased him one bit!<\/p>\n<p><div id=\"attachment_1088\" style=\"width: 650px\" class=\"wp-caption alignright\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-1088\" class=\"caption alignright size-full wp-image-1088\" src=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2012\/10\/difara pie.jpg\" border=\"0\" title=\"We eventually got to meet our pie and all right with the world.\" align=\"right\" width=\"640\" height=\"640\" srcset=\"https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2012\/10\/difara%20pie.jpg 640w, https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2012\/10\/difara%20pie-150x150.jpg 150w, https:\/\/www.fornobravo.com\/pizzaquest\/wp-content\/uploads\/sites\/2\/2012\/10\/difara%20pie-300x300.jpg 300w\" sizes=\"(max-width: 640px) 100vw, 640px\" \/><p id=\"caption-attachment-1088\" class=\"wp-caption-text\">We eventually got to meet our pie and all right with the world.<\/p><\/div>We ate. \u00a0We smiled. \u00a0We enjoyed. \u00a0We watched everyone around us doing the same. \u00a0For the record, Dave ate one more slice than I did and he&#8217;s half my size! \u00a0We had to stop though, because this was stop 1 of 3 on our small &#8220;p&#8221; pizza quest. \u00a0But wait,\u00a0I didn&#8217;t say enough about the pizza.<\/p>\n<p>\u00a0<\/p>\n<p>\u00a0<\/p>\n<p>\u00a0<\/p>\n<h3>Oh my god! \u00a0So good!!<\/h3>\n<p>\u00a0<\/p>\n<p>\u00a0<\/p>\n<p>\u00a0<\/p>\n<p>\u00a0<\/p>\n<p>What makes great\/memorable pizza? \u00a0Is it the dough? \u00a0Is it the tomato sauce? \u00a0The cheese? \u00a0Is it super fresh basil? \u00a0Is it the oven temperature, or type of oven? \u00a0I think the answer in part to all of these is yes, certainly, but there is something beyond that. \u00a0Perhaps another important aspect is, in fact, time. \u00a0It&#8217;s the time the <em>pizzaiolo<\/em> has spent perfecting his craft. \u00a0It&#8217;s the time he spends focusing on each ingredient. \u00a0it&#8217;s the time he gives to each pizza, which is really being given to each customer. \u00a0You could call it love, dedication, or passion, but it&#8217;s all about the connection of the food to the customer through the time given to sharing the experience.<\/p>\n<p>I&#8217;m glad I spent the first part of my day off in Di Fara&#8217;s time-less zone. \u00a0I thought time had stopped, but it was, instead, shared.<\/p>\n<p>{gallery}difarapizza{\/gallery}<\/p>\n<p>\u00a0<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Di Fara Pizza &#8211; Part I of a 3 stop pizza quest: Dave Wilson (our very own Pizza Quest Director of Photography and Co-Director on our various webisodes) and I were working in New York together and realized that it looked like we were going to actually have a Saturday afternoon off. \u00a0Time for ourselves! \u00a0The wheels were spinning. \u00a0What to do?
