Appetizers and Tapas

Introduction
Cook appetizers with a fire burning in the side of the oven, using a stainless steel, cast iron or aluminum pan. The reflecting heat from above, combined with heat conducting through the bottom of the steel pan, cook appetizers in a couple of minutes.

You can serve appetizers before a pizza party, or before a roast or grilled meal, or you can make an entire meal, as the Spanish do, making a number of Tapas, or small plates.
