We have just introduced Kelly Whitaker of Pizzeria Basta with his Bel Gioioso Burrata Cheese appetizer in the Instructional section. Let me just say that this is a recipe you will want to try at home. I have personally made this 3 times since I returned from the trip. As Kelly says, he uses whatever he has in season, or on hand. I have done my versions with Leeks, Scallions and Red Onions and each time it was wonderful. Here is a little introduction about Kelly's amazing pizzeria in Boulder, Co.
