Connecting your Chimney |
The Casa, Premio and Ristorante ovens are designed to be connected to a standard modular steel chimney system. The table below outlines the internal dimension of the chimney system recommended for your size oven. |

Typically you would use a steel double wall chimney system for an outdoor installation and a triple wall chimney for an indoor installation. Contact your local chimney or fireplace supplier, and ask for a Simpson Listed modular chimney system.
Place the chimney system over the opening of the chimney manifold that comes with your oven, and hold it in place with 2-3" of refractory mortar. Check it for level as the mortar dries.
The height of the top of the chimney must be at least 24" above the top of you oven enclosure, and topped with a spark arrestor.
You will need to insulate the chimney before you apply your finish (either a stucco Igloo, or a Gabled House), which we describe in a later section.
You are now ready to Coat Your Oven.
