vent in dome.

My Uncle has a vent in the side of his dome which he leaves open for firing, and closes with a mortar plug when it's time to cook. Has anyone seen this before? He says he used similar vents in ovens he was brought up using as a kid in a Cypriot village. I'll have him send me a photo.
