| Hi Wayne, I know what it is like to over order. I purchased 5 x 25Kg bags of fireclay and used around 15Kg for the whole of my 40" Pompeii. That was used in the por man's mortar and for bedding the slightly narrower fire bricks into the heart, but I used it dry, not mixed with cement nor water. Hendo came and bought a bag but it is a bit too far to post one over to you. I have 4 thermocouples in my oven, on just under the cooking surface in the centre of the hearth, one on the underside of the hearth bricks, one around 15mm into the centre dome brick and the last measuring the temperature soak through the dome. There are different types but the K type that I used are made up of 2 different wire types which are fusion joined (welded) at their very tip. this joint of differing metals produce a very small electric current which is read on a sensitive meter and displayed in degrees Celcius or as the Americans use Fareheiht. I have more use for my Infra red thermometer that I aim into the oven for surface temp readings rather than the thermocouples. Once you get up and going, you will get to know your oven and temps and not use or rely on the thermocouple readings. The one thing that they do well, is to let you know how deep through the bricks, commonly known as 'soak', the temperature is so that you can establish how many cookings will be achievable at the time. | Hi Wayne, Forno Bravo have these infrared thermometers on line but as we don't have FB here in Australia, I purcheased mine from: http://www.maxtool.com/index/Digital...ermometers.asp I paid via Paypal anf the thermometer arrived within 6 days. Great sevice and a good product. Simply aim the laser pointer to where you want to read the remp, select the readout as °C or °F, press the trigger for 1 to 2 seconds and read the temperature. That easy and accurate to +or- 2°.The one I got is a MTPro and cost US$59. Do a Google search for 'Infrared thermometer' and find a supplier near you. Neill
