Default Primavera oven opening

The roughly 60% opening height rule does not seem to apply to Primavera ovens. Are the dome heights on both the Primavera 60 & 70 ovens taller than their floor radii? Or are the openings made taller solely for the ease of operation?

You are misreading the specs. The Primaveras are conventionally configured wrt the door. The door height is a function of the interior dome height. The Primaveras are (at least appear to be) tall for their diameter but that is a separate issue.
