| has anyone dealt with building an oven in a commercial setting? i'm working towards eventually opening a pizzaria, napolitana style. i'm wondering how this design will stand up against building codes and regulations. i'd rather build, and REALLY do the next one up nice, than just buy one UL listed.

| I would guess that it depends on the municipality. Chances seem pretty high that the oven would be considered a fireplace and the relevant codes would apply. Just hope they don't decide it's a furnace! |
