I'd like to expand on Jim's posted questions under Cooking Classes at Ramekins in Sonoma . Maybe I missed it in the instructions for building the Pompeii, but do you advocate installing a thermocouple any where in the oven? If so single or multiple locations? What type (manufacturer)are suggested, what display, where is display located and where can I find them?
